According to Founder and Owner, Claudia Tagle, business owners must focus on their social media content to stand out against competitors, especially since customers “eat with their eyes”.

“It’s important for you to get those really good shots of your food or the products that you’re selling,” Tagle explained, which involves investing in food photography and social media content. “I do have slower days or slower months, and I think that consistency is key. You just need to learn how to market or promote your products more because your loyal customers will come back.”

She also shared how valuable it is to engage and build relationships with one’s customers. “What really keeps me going is my customer’s feedback, and when they tell me they really enjoy the cookies or the blondies. Getting feedback about what they like and don’t like about your products can help you improve further.”

Believe in your product

Butterboy Bakehouse (@butterboyph) focuses on different kinds of croissants and baked goods to make pastries more affordable and accessible for everyday Filipinos.

Head baker and owner Hilder Demeterio credits his businesses’ wins to two key ingredients. “You should seek knowledge from everywhere, like YouTube videos or classes. You should just try to absorb whatever you can,” he said.

Growing up, Hilder was always a lover of food from a distance. It wasn’t until 2018 that he finally began to experiment with baking after meeting his boyfriend, Jason. An architect by profession, Hilder took lessons from his relatives and sought knowledge online, beating the misconception that you need to be a professional cook to start a successful food business.

Moreover, he believes that it’s important for aspiring foodpreneurs to believe in their products as if they’re the brand’s number one fan. “In the middle of the pandemic, I was 6 months unemployed. I borrowed money from my parents, and I emptied pretty much all of my savings. Pati sa boyfriend ko. So during that time, I took a leap of faith and I bought all my own equipment, tapos ayun, we jumped into the unknown with only the knowledge na ‘I think we have something good here’.”

For restaurateurs Wendel and Portia Habaluyas, The Purple Wok (@thepurplewok) began as a way to support their loyal kitchen staff who were laid-off due to the pandemic. “These people have been loyal to us for many years now, so it was very painful for us to see them feeling hopeless,” said Portia.

For the power couple behind The Purple Wok, it’s all about following your passion. “The most fun part in running a food business is doing what I love to do. Our recipes were created out of passion. They were made out of love. We’ve perfected the recipes, and we do not compromise the quality of our food,” the couple told La Germania.

As for what advice they would give aspiring entrepreneurs, Wendel says: “Never create a recipe just for a business and just to create money. Especially nowadays, we noticed that Filipinos are willing to pay a premium or extra for good and quality food. If there’s one advice we can give to people who want to start a food business, it is for you to cook with passion and prepare your food with passion.”

  • 1.5 lbs salmon, cut into four pieces
  • One small zucchini, thinly sliced
  • One head fennel, thinly sliced
  • One lemon, thinly sliced
  • 1 tsp dried dill
  • 4 tsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • Parchment paper

Procedure:

  • Preheat the oven to 375°F.
  • Cut parchment into four large ovals 15” by 10” inches. Then, fold each parchment in half.
  • On half of each parchment, layer on ¼ of the zucchini, ¼ the fennel, one piece of salmon, sprinkle with ¼ tsp salt, ¼ pepper, ¼ tsp dill, lemon slices, drizzle each salmon with one teaspoon olive oil and a few pieces of fennel fronds. Repeat this process with the three remaining salmon filets.
  • Close the parchment by folding the other half over the prepared salmon and carefully roll the open edges toward the center.
  • Set pouches on a baking sheet and bake on the center rack for 15 minutes.
  • Open carefully using a fork and serve.

  • Four medium sweet potatoes, peeled and cut into 1/4-inch matchsticks

Following this 30-minute recipe will be easy peasy with your La Germania electric stove.

Ingredients:

  • One tablespoon olive oil
  • One yellow onion, diced
  • Six cloves garlic, minced
  • 1/2 teaspoon freshly grated ginger
  • One teaspoon turmeric
  • ½ teaspoon paprika
  • One tablespoon lemon juice
  • One large sweet potato (about 1/2 lb) diced into ½” cubes
  • 1 15oz can of chickpeas, rinsed and drained
  • 1 cup red lentils, uncooked and rinsed
  • 5 cups vegetable broth
  • 1/2 cup kale, destemmed and torn into 1” pieces
  • Salt to taste

Procedure:

  • In a large pot or dutch oven, heat the olive oil over medium heat for 1 minute.
  • Add the onion and cook over medium heat for 8 minutes, stirring occasionally.
  • Add the garlic and ginger and continue to cook for 1 minute until fragrant.
  • Add the turmeric and paprika and continue to cook for 1 minute.
  • Add the lemon juice, sweet potatoes, chickpeas, red lentils, and vegetable broth and bring to a boil.
  • Once the soup begins to boil, reduce the heat to low and simmer for 15-20 minutes until the sweet potato is soft.
  • Add kale and continue to cook for 2-3 minutes until the kale has softened and wilted slightly.
  • Season with salt to taste.

Christmas Cookies

Ingredients:

FOR THE COOKIE DOUGH

  • 3 cups all-purpose flour, plus more for surface
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 tbsp. milk

FOR THE BUTTERCREAM FROSTING

  • 1 cup (2 sticks) butter, softened
  • 5 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 tsp. pure almond extract
  • 1/4 tsp. kosher salt
  • Food coloring

Directions:

  1. In a large bowl, whisk together flour, baking powder, and salt. Set the mixture aside after.
  2. In another large bowl, beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined, then add flour mixture gradually until totally combined.
  3. Shape into a disk and wrap in plastic. Refrigerate for an hour.
  4. When ready to roll, preheat the oven to 350º and line two baking sheets with parchment paper. Lightly flour a clean work surface and roll out the dough until 1/8” thick. 
  5. Cut out shapes and transfer to prepared baking sheets. You can use cookie cutters for fun shapes. You can also make your own if you’re feeling creative. Freeze it for 10 minutes (so your shapes hold while baking).
  6. Meanwhile, make the frosting: In a large bowl using a hand mixer, beat butter until smooth, then add powdered sugar and beat until no lumps remain. Add cream, almond extract, and salt and beat until combined.
  7. Bake cookies until the edges are lightly golden, 8 to 10 minutes. 
  8. Let cool, then frost and decorate as desired.

Dulce de Leche

A staple in smaller homes, an induction cooker can do a lot of wonders. This heat-tempered glass worktop has a timer and child-lock, meaning you can cook dishes safely and precisely while you bond with your kids in the kitchen.

Ingredients:

  • 8 cups of whole milk
  • 2 to 2 ½ cups sugar (adjust based on your preference)
  • 1 tsp vanilla
  • ¼ tsp baking soda

Directions:

  1. Combine all the ingredients in a large pot over medium-low heat, stir until the sugar or panela is well dissolved. Reduce the heat to low.
  2. Continue cooking until the mixture is significantly reduced and starts to thicken while the color changes from a creamy beige to a caramel tone. It will take between 2 ½ hours to 3 hours for the dulce de leche to be done.
  3. During the first 1 ½ hours you will need to stir occasionally to prevent it from boiling over and sticking. During the last hour, it needs to be stirred more frequently and has to be watched very closely to keep it from burning – you can also decrease the heat to low. 
  4. Cook it until it has a dark amber or caramel tone and has a creamy consistency. Keep in mind that it will thicken more when it cools down.
  5. The final product can be served warm or cold and must be kept refrigerated.

Classic Bibingka

  • 1 cup coconut milk
  • 1/4 cup fresh milk
  • 1 piece salted duck egg sliced
  • 1/2 cup grated cheese
  • 3 pieces raw eggs
  • Pre-cut banana leaf

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit. Meanwhile, combine rice flour, baking powder, and salt then mix well. Set aside.
  2. Cream the butter then gradually put-in sugar while whisking. Then, add the eggs then whisk until every ingredient is well incorporated.
  3. Gradually add the rice flour, salt, and baking powder mixture then continue mixing.
  4. Pour in coconut milk and fresh milk then whisk some more for 1 to 2 minutes.
  5. Arrange the pre-cut banana leaf on a cake pan or baking pan.
  6. Pour the mixture on the pan, then bake for 15 minutes.
  7. Remove from the oven then top with sliced salted egg and grated cheese (do not turn the oven off).
  8. Put back in the oven and bake for 15 to 20 minutes or until the color of the top turns medium brown.
  9. Remove from the oven and let cool. Brush the dish with butter and sprinkle some sugar on top once it cools. You can also top this with grated coconut.

Secrets to making the perfect steak dinner from Saab Magalona-Bacarro and La Germania

There’s nothing like enjoying a delicious steak dinner to mark special occasions. While it may not be advisable to dine out and have this juicy classic in your favorite restaurant just yet, the good news is that you can cook this dish right in the comfort and safety of your home!

​Actress and musician Saab Magalona-Bacarro, alongside her husband, businessman and Cheats frontman Jim Bacarro, make it a point to still hold romantic date nights with some good ol’ steak and mashed potatoes. “We enjoy preparing steak and potatoes because it’s delicious, hearty, and fancier than our usual meals, but also really easy to prepare,” Saab shared. Aside from having steak on date nights, they even repurpose them into steak fried rice for their kids.

In the first episode of La Germania’s recent Masterclass Series, the famous couple shared their secrets to making this dish at home. While you can watch the full episode on La Germania’s Facebook page to see how they prepare this classic dish, here’s the recipe you can try at home:

Ingredients:

Steak
● 500g rib eye steak
● Salt
● Pepper
● Butter
● Garlic
● Thyme

Mashed Potatoes
● Potatoes (5 large potatoes)
● 250ml Cream
● Beef cube
● Butter
● Parmesan Cheese
● Parsley
● Olive oil
● Stevia
● Cayenne pepper
● Paprika

Procedure:

  1. Make sure your steak is at room temperature for at least 10 minutes.
  2. Season the tray or cutting board first. 30% of the seasoning disappears when you cook beef, so make sure you season liberally. Then, rub both sides of the beef on the tray.
  3. Season the beef again until it looks encrusted in seasoning.
  4. Put the stove at a low temperature before putting the meat. The meat must be cooked in piping hot heat, so you have to be ready.
  5. Meanwhile, you cut the potatoes, and boil them for about 12 minutes. Use a fork to check how soft the potatoes are. Then, you mash the potatoes.
  6. Deglaze the pan with some red wine if you want some sauce alongside your steak.
  7. Put butter gradually on your potatoes. Taste test the potatoes so you can gauge how much seasoning you need to after.
  8. Once you season the potatoes to your preference, you can add some garlic.
  9. Fry some garlic with half a tablespoon of olive oil on low heat. Then add the cream, beef cube, and herbs of your choice.
  10. Put the sauce on the potatoes using a strainer. Add the garlic chunks if you would like. Then, put it back on the stove. Mix it around, and taste test if it’s seasoned according to your liking.
  11. If you like your steak medium, you should cook your steak for 4 minutes on each side. Leave it to cool down for about ten minutes, and enjoy immediately.

La Germania shares how to recreate your favorite dishes from Cibo, Yabu and other beloved restaurants

Have you ever wondered what it’s like to cook like your favorite chefs? Participants had the opportunity to learn how to cook like the pro’s themselves during the Cooking with La Germania: Masterclass Series, a five-part installment of virtual cooking classes held in partnership with celebrities and chefs from renown restaurants all over Metro Manila. 

In the webinar series, expert instructors guided viewers through the step-by-step process of how to cook their signature dishes, disclosing their tips and tricks along the way. Attendees also had the opportunity to interact with the chefs, who assisted them throughout the process. 

Among the impressive lineup were award-winning restaurateur Chef Margarita Forés, celebrity chef Rolando Laudico of Chef Guevarra’s and OK Cafe, and Chef Lee Jose from the Standard Hospitality Group which manages Yabu and Ippudo. In case you missed out on the unforgettable series, worry not! Not your typical pancake

Okonomiyaki

There’s more to Japanese cuisine than ramen and sushi. Chef Lee Jose, Executive Chef of popular Japanese restaurant chains Yabu and Ippudo, demonstrated how to make the savory version of Japanese pancake, Okonomiyaki. Not only is it an easy and filling recipe, but it’s sure to wow your friends and family! It’s best if you shop at a Japanese grocery store before you try this recipe, as a lot of ingredients won’t be found in your usual supermarket. 

Ingredients:

Okonomiyaki Batter

  • ¾ cups of water
  • 1 tsp Honodashi powder
  • 1 cup all purpose flour
  • ⅛ tsp iodized salt
  • ¼ tsp sugar
  • ½ tsp baking powder
  • 4 large eggs
  • 4 cups of cabbage
  • ½ cup of tenkasu (tempura flakes)
  • 1 tbsp Benishoga (pickled ginger)
  • Regular sliced bacon
  • 4 tbsp spring onions
  • 4 tbsp canola oil

Okonomiyaki Sauce

  • 1 ½ tbsp white sugar 
  • ⅛ tsp salt 
  • 3 ½ tbsp Worcestershire sauce 
  • 4 tbsp tomato ketchup 
  • 2 tbsp Oyster sauce 

Assembly

  • 1 tbsp cooking oil 
  • 1 cup Okonomiyaki batter 
  • 3 slices regular sliced bacon
  • 2 tbsp Onomiyaki sauce 
  • 1 tsp Aonori powder
  • 2 tbsp Japanese mayonnaise
  • Bonito flakes
  • 1 tsp Spring onions

Procedure:

  1. Prepare the Okonomiyaki batter by chopping the cabbage into 1/2″ chunks. Do not use the hard core. In a mixing bowl, add water and hondashi powder and whisk to dissolve the hondashi powder. Add the rest of the dry ingredients (flour, salt, sugar and baking powder). Whisk until the batter is smooth, then add the eggs and whisk until fully incorporated in the batter. Add the chopped Cabbage, Tempura flakes, Pickled Ginger and Spring onions. You can also add whatever fillings you desire (mushrooms, ham, pre cooked seafood, etc.) Using a rubber spatula, fold the batter until every ingredient is coated. Cover and keep chilled until ready to cook. This recipe yields 4 portions. 
  2. For the Okonomiyaki sauce, put all ingredients in a bowl and mix until all the sugar has dissolved. Keep in an airtight container and set aside. Keep chilled. 
  3. Heat up a non-stick pan and add 1 tbsp of oil on medium heat. When the pan is hot, scoop 1 cup of batter and add to the middle of the pan. Using your rubber spatula, gently level out the batter, then cover and let the batter cook a bit for 2 minutes. 
  4. Remove the cover and lay down 3 slices of bacon on top of the pancake. Cover and cook for 1 minute more, then gently flip the pancake and turn the heat to low. Cover and cook for another 3 minutes, then test for doneness by sticking a knife or chopsticks in the middle of the pancake to test if it’s fully cooked. If the stick or knife comes out clean, it’s cooked.
  5. Spread 1-2 tbsp of okonomiyaki sauce on top of the pancake and spread out evenly. Sprinkle the aonori (seaweed powder) and drizzle the Japanese mayonnaise. Top the pancake with bonito flakes & spring onions. Serve right away.

You may be an expert in making meatballs, but have you tried Longanisa meatballs? Chef Rolando Laudico of Chef Laudico Guevarra’s and OK Cafe taught the audience his secret to making his elevated version of Filipino breakfast classic Longsilog, better known as “Long-Ri-Long”, which is Longanisa meatball on creamy garlic salted egg risotto, poached eggs and oven dried tomatoes. 

Ingredients:

Longanisa Meatballs

  • 500g longanisa ground meat
  • Half cup small white onion, diced
  • 2 tbsps fresh basil, chopped 
  • 2 tbsps fresh Italian parsley
  • Half cup grated parmesan cheese
  • 1 whole egg, beaten
  • 1 cup bread crumbs
  • Half cup milk 
  • 4 tbsps extra virgin olive oil 

Creamy garlic salted egg risotto

  • 1 cup risotto rice (arborio or any short grain rice)
  • 2 tbsps butter
  • 1 head of garlic, minced
  • 1L chicken stock
  • 1 cup of cream
  • 2 salter eggs, chopped fine
  • Sea salt and freshly ground pepper, to taste 

Oven dried tomatoes

  • 6 whole tomatoes, halved
  • Sea salt and freshly ground pepper, to taste
  • Extra virgin olive oil, to drizzle

Poached eggs

  • 4 eggs
  • Sea salt
  • 4 cups of water 

Procedure:

  1. To make the longganisa meat balls, begin by mixing bread crumbs and milk together in a cup and let milk absorb for 5 minutes. In a big bowl, take out fresh longganisa meat from the casing (discard casing) and mix all other ingredients together. Refrigerate for 30 minutes to an hour. Form into meatballs and fry using a non-stick pan with 4 tablespoons of olive oil until brown. Place in a sheet pan and bake in the oven at 175C for 10-15 minutes or until meatballs are fully cooked. 
  2. To make the risotto, heat butter in a saucepan on medium high heat and add minced garlic. Saute for 2 minutes or until garlic is golden in color, then add risotto rice or sticky rice and cook for 2 minutes. Add chicken stock 1 cup at a time and gently stir until liquid has been totally absorbed. Repeat the process until the rice is cooked. Rice should be a bit al dente. Add more stock if needed depending on the type of rice used. Finally, add cream and finely chopped salted egg then cook for another 2-3 minutes. Garnish with fresh herbs like Italian parsley.
  3. For the tomatoes, slice them in half then season with sea salt and pepper. Bake in a 175C oven for 15 to 20 minutes or until tomatoes have dried a bit. 
  4. For the poached eggs, add water in a small cup then add a pinch or two of sea salt. Break the whole egg and add to the cup being careful not to break the yolks. Place the cup in a microwave for 45 seconds to a minute depending on the power of the microwave. Spoon out poached egg on a paper towel to absorb excess liquid. Repeat the process to the other 4 eggs. 
  5. For assembly, on a platter or plate, spread salted egg garlic risotto then top with longanisa meatballs, oven dried tomatoes, poached eggs and garnish with fresh herbs.

While the recipe behind Cibo’s famous Penne al Telefono will remain a secret (revealed exclusively to the attendees of the Masterclass series), here are some of Chef Margarita Forés biggest do’s and don’ts when it comes to cooking the perfect pasta. 

For one, the quality of your ingredients and the way they were manufactured makes a world of a difference when it comes to the richness and flavor of your meal! This is why you need to choose your ingredients carefully, and understand the science behind how they were made and how they react to other ingredients. For instance, Cibo recommends using pasta from the brand “De Cecco”, which uses a bronze pasta shaper that creates more porous noodles, allowing sauces to cling to the pasta better. 

For Margarita’s biggest don’ts, do not check for doneness by throwing your pasta against a wall and expecting it to stick. This means that your pasta is overcooked! Furthermore, do not run your freshly cooked pasta under cold water, as this removes all the flavor. Remember that pasta water is your best friend, and is a vital ingredient to the flavor of your pasta.
