Baked goods do tend to elicit a feeling of happiness. From their appetizing scents wafting to our nostrils, the sight of them laid out on the table to their sweetness as we bite into them, baked goodies sate our hunger while also calling to mind fun memories from our childhood.

This family business started out in 2010 as a local panaderia supplying morning pan de sal to its patrons.

In response to the changes brought about by the pandemic and its resulting community quarantine, the family behind Bantay Bread set about pivoting their business to operate in their new business environment.

First, they expanded their product offerings to include much-loved Pinoy desserts, some of which my family and I were recently able to sample. These include:

Kabayan. Bite-sized butter muffins shaped like the Pinoy salakot. My daughter – a middle-aged Asian tiger mom trapped in the body of a Gen Z girl – developed a liking for it as it is not too sweet.

Hopiang Baboy. A Filipino pastry, that contrary to the name, actually does not contain pork meat. This flaky pastry is actually filled with onions caramelized in pork fat and combined with flour, sugar and milk. Hubby likes to munch on these during his coffee break.

Pianono. Interestingly, this pastry is actually named after Pope Pius IX whose nickname was Pio Nono. Of course, we Filipinized its name to pianono. It is a sponge cake roll with a sweet buttercream filling. I recall having this as my baon for recess when I was in grade school. My son – a sweet tooth like me! – likes having this for dessert.

Chef Resty’s Roast Beef

I’ve always considered roast beef as similar to lechon.

To me, it is a show-stopping food that can serve as the central dish of a feast. In fact, when I dined at eat-all-you-can buffets, I usually make a beeline for the carving station to fill my plate with roast beef slices.

I also find it a dish of many possibilities: aside from being a main dish in itself, leftovers can be made into all sorts of dishes. These can range from roast beef sandwiches, beef salpicao, beef stroganoff, roast beef burrito and roast beef cottage pie. Imagine, from one dish, you can have several tasty iterations!

This past New Year’s Eve, I decided to have Chef Resty’s Roast Beef as the centerpiece of my family’s Media Noche Feast.

I used to get my roast beef fix at a Chef Resty’s Roast Beef Carving Station at SM Pasig but, sadly, that kiosk has since closed.

Fortunately, there’s another way to get my fam’s roast beef: instead of heading west from my home to SM Pasig, I instead looked to the east!

Chef Resty has opened a dine-in restaurant at Sitio Elena Events Venue in Cainta. I simply had to call my order in the day before, pay for the roast beef and the in-house delivery fee via GCash and await my slab of beefy goodness the next day.

It arrived way too early from Media Noche, but that’s ok. I just had to reheat it in a 250 deg C oven for ten minutes. It came out piping hot and ready for the fam’s New Year’s Eve feast. It was also accompanied by Chef Resty’s signature gravy which completed the dish.

Each slice was tender, juicy and so flavorful. Clearly, it was the highlight of our celebration!

Chef Edmond Dannug brings back-to-basics comfort food via Heavenly Spiced

You would think that after honing his craft through stints at upscale hotel restaurant Amber in Hong Kong and as head chef of Enderun Events in Davao, Chef Edmond Dannug will bring his considerable skills to bear in whipping up complex French dishes when he decided to go into business.

But no.

Instead, he opted to offer comfort food – his personal favorites, actually – through the online store that he co-manages with his fiancee Jasmine Guillarte. They named it Heavenly Spiced.

“My cooking mentors always taught me that the best food are the simplest,” he shares.

Still, the dishes on offer at Heavenly Spiced are no run-of-the-mill viands. Their flavors have been enhanced through careful preparation and cooking techniques ingrained into culinary professionals, such as Chef Edmond. They come in large party trays that can serve six to eight people and are perfect for small gatherings or for a special family meal that you don’t want to slave over in the kitchen.

He started out with the Hainanese Chicken and Rice (Php850), widely considered as one of Singapore’s national dishes. Based on the Wenchang Chicken, a well-known dish in South China dating back to Qin Dynasty, this dish is painstakingly made by poaching a whole chicken in sub-boiling temperature, with some of the resulting stock combined with ginger, garlic and other flavorings to cook the flavorful rice that will accompany the dish. Chef Edmond completes this platter with bright green bokchoy and the three traditional dipping sauces for Hainanese Chicken: a red chili sauce, a thick and dark soy sauce, and a paste of freshly ground ginger.

Another of the chef’s comfort food faves is the Bourbon Glazed Barbecue Pork Ribs (Php1,400). Meat lovers would love to get a hold of this dish! Slow-smoked, falling-off-the-bone meat flavored with a sweet-savory bourbon glaze and partnered with umami corn cobs made for a finger-licking dish! It’s messy eating but there’s really no better way to enjoy it.

Chef Edmond recently expanded his menu to include Chicken Wings (Php900). Inspired by his favorite chicken chicken place Frankie’s, this dish is made with large pieces of chicken wings which are deep-fried then coated with a vinegar-based cayenne pepper glaze. They are then served with bleu cheese dipping sauce which made for a well-balanced combination of sweet, spicy and tangy flavors.

The chef’s newest creation which also joins Heavenly Spiced offerings is the Angus Burger (Php1500). Six hefty quarter-pound patties made with ground Angus beef are lightly seasoned and then grilled to medium doneness to bring out their beefy goodness. These are then placed in grilled brioche buns along with lettuce, tomato, battered onion rings and cheddar cheese then coated with the chef’s Bourbon Barbecue Glaze and served with a side of umami fries.

As the clock struck down to this New Year, I’m sure many of us resolved to live healthier lives, yes?

Central to healthy living is healthy eating. What we choose to nourish ourselves determine quite a lot of how our wellness efforts shape out.

However, we might find ourselves inundated by a barrage of information about eating right, some of which may not be so helpful in achieving our health goals.

Myth #1: Say goodbye to meat and dairy.

Going all plant-based may have incredible health benefits such as lowering rates of diabetes and heart disease. However, we can’t discount that animal products are excellent sources of protein, B vitamins, iron and zinc. Cutting meat and dairy out of your diet means that you are limiting your options for getting these nutrients.

Myth #2: Ditch the processed food.

In today’s fast-paced life, not all of us have the time and energy to prepare our food from scratch. Sometimes, we would need to resort to processed food. The trick is in choosing which kinds of processed food to incorporate into our meals. For example, frozen and canned vegetables and fruits provide an easy way for us to get the nutrients we need from these food items even when they’re off season.

Myth #3: Toss off all the fat.

For decades, fat has been vilified as the big bad of food. It has been blamed for everything from widening girths to heart disease. The thing is: we need fat. It provides the feeling of satiation when we eat and it helps out bodies absorb other nutrients such as vitamins A, D and E.

Myth #4: Do away with desserts.

Being a sweet tooth, I shy away from diets that compel me to give up desserts. I would reason that by doing so, I would live longer, but would I want to? (Yes, dessert is my reason for being.)

The trick is in choosing which food items go into the sweets we eat: if we opt for healthier versions of the usual decadent ingredients like substituting milk with soy or almond milk or choosing a lower calorie cream are already significant steps you can take to eat healthy.

Myth #5: Skip meals.

It seems so simple, doesn’t it? To lose weight, you need to eat less. To eat less, simply skip a meal. However, doing so may also mean depriving yourself of key nutrients and energy you need to power through your day. (I know I can get cranky when I skip a meal.)

A sumptuous taste of the East at Wangfu Chinese Cafe

Chinese cuisine is so ingrained in the local food scene that I simply can’t imagine going without it.

As one of the chief culinary influences to the Pinoy cuisine, Chinese food has been a frequent feature of many a Pinoy table from simple family dinners to lavish feasts.

In pre-COVID times, my officemates and I would sometimes go to the Wangfu Chinese Cafe branch near our office for lunch. There, we would feast on tasty yet affordable Chinese dishes that would sate our midday hunger and power us for our tasks for the rest of the workday.

Hakaw (Php206.84). Both my daughter and I go crazy over this shrimp dumpling. When dipped in toyomansi with a little bit of chili paste, it’s irresistible!

Half Hainanese Chicken (Php614.25). Half of a chicken poached in sub-boiling temperatures along with ginger, garlic and pandan leaves, then sliced upon serving. It’s best eaten with the oily chicken rice accompanied by three dipping sauces – soy sauce, chili sauce and ginger sauce.

Chicken Rice (Php84.48). The stock produced in poaching the chicken is used to boil rice, producing a flavorful oily rice (Yes, it’s oily and I don’t care! It’s yummy!) that goes so well with the chicken.

Salted Egg Squid (Php457.55). Breaded and deep-fried squid rings flavored with mashed salted egg yolks.
