Paella Valencia from Mom & Tina’s

Which dish that, when added to your spread, automatically levels up your home celebration?

For me, it’s the paella.

It’s one the dishes brought over from Spain during our colonial days and it has since found its place in our local cuisine. It combines the use of rice (our staple food), seafood (which we have in abundance) and chicken (which makes it a complete and filling meal in itself).

Mom & Tina’s Paella Valencia
Mom & Tina’s Paella Valencia
Mom & Tina’s Paella Valencia
Mom & Tina’s Paella Valencia

Paella’s origins can be traced back to Valencia in Spain, and is widely considered as one of the regions cultural symbols. It takes its name from the wide and shallow pan traditionally used to cook it.

Local bakery cafe Mom & Tina’s also makes traditional homecooked dishes which also includes paella.

Its version of Paella Valencia has the same basic ingredients: rice, mussels, shrimp and chicken, which are sauteed in olive oil with garlic, tomatoes and chorizo. Squeezing some lemon juice into the cooked paella right before eating adds a zing of citrusy freshness to the dish.

Mom & Tina’s Paella Valencia

For my fifteenth wedding anniversary celebration at home, I decided to pair it with my version of the Cheesy Baked Salmon, which resulted in a winning combination!

The briny and acidic tones from the paella perfectly complemented the rich taste of the baked salmon.

Feeling at home at BOTEJYU, SM City East Ortigas

My fam and I do enjoy being so near what we consider to be our neighborhood mall, SM City East Ortigas.

As it is the site of quite a number of great restaurants, a delicious meal for the family is just a short drive away.

Imagine our excitement when we got word that BOTEJYU is opening a branch here.

This chain traces its roots back to Osaka, Japan where it was established in 1946 as an okonomiyaki restaurant.

Okomiyaki is a dish that emerged in postwar Japan during a food shortage. As American provisions were unloaded at Osaka and Kobe ports, the locals discovered American flour mixed with water results in a pancake that can serve as an alternative staple food.

BOTEJYU’s founder Eikichi Nishino discovered another culinary delight which also makes use of an American provision – mayonnaise – this time, as a topping for okonomiyaki.

The dish is central to the restaurant’s concept that its name was coined after the sounds heard when cooking its signature dish: “BOTE” from the sound made when flipping the okonomiyaki and “JYU” from the sizzling sound it makes as it cooks on the teppan grill.

Pinoy comfort food at Goodah, Timog Avenue

Whenever I feel stressed or harassed, I always get a strong craving for comfort food. These are dishes that I usually associate with delicious home cooking, the kind that my mom would serve me whenever I was sick or sad.

For over thirty years, Goodah has been the has been the go-to place for people seeking fuss-free comfort food that appeals to down-home Pinoy palate. These include the traditional hot and quickly-served Filipino snacks like goto and lugaw, as well as the hugely popular silogs. Being so popular among all sorts of people, it soon adopted the monicker “ang pagkaing for every all!”

During the height of the lockdown due to the pandemic, I was able to enjoy Goodah’s comforting dishes with my fam while stuck at home through its Salo-Salo Set Meals (thanks to Rowena of TravelEatPinas for thoughtfully sending me this meal set!)

However, as the lockdowns gradually eased (but my work and life stresses did not) I wanted to experience Goodah’s down-home Pinoy dishes in a dine-in setting.

So off I went with my fellow unnies to the Goodah branch along Timog Avenue.

#SweetDelight: Red Ribbon’s Caramel Crunch Cake is back!

One of my most treasured early foodie memories is discovering Red Ribbon’s Caramel Crunch Cake.

During my summer break from grade school, my mom and I dropped by a Red Ribbon branch along Shaw Boulevard where beautifully crafted cakes were on display.

I remember us taking home this exquisite confection which was a far cry from the usual cakes we bought for family celebrations.

It is quite a visual wonder: a round cake made of layers of delicate chiffon, cream and caramel jelly, topped with cubes of honeycomb crunch. Each bite leads to a complex explosion of creamy, crunchy, and caramel-y delight in my mouth.

Egg puns aside, this new line incorporates one of our well-loved ingredients: the salted egg!

From the time it was introduced into our shores when our ancient forebears traded with the Chinese, the salted egg has become a staple addition in many of our much-loved native dishes, adding a rich and exotic flavor to our cuisine.

Today, fast-food chain Kenny Rogers Roasters incorporates this ingredient into its healthy chicken variants, such as:

Salted Egg Roast.

Generous chicken pieces marinated in special herbs and spices, roasted to juicy and smokey perfection, then garnished with salted egg powder and salted egg sauce. It is best enjoyed with steamed rice, your favorite Kenny Rogers Roasters side dishes and corn muffin.

Salted Egg Unfried Fried Chicken.

A healthier and more exotic alternative to fried chicken, this consist of chicken pieces cooked through an oven with circulating hot air instead of being deep-fried, cooking the meat in its natural oil. The resulting juicy and crispy chicken pieces are then given an generous coating of salted egg powder and served with salted egg sauce. Partner this tasty viand with steamed rice, your favorite Kenny Rogers Roasters side dishes and corn muffin.

Sumptuous snacking at Silverspoon, Tomas Morato

Did you welcome the loosening of quarantine restrictions and the prospect of being able to dine out?

I know I did!

Aside from the assurance that the pandemic is steadily easing its hold on the metro, the added freedom to wander about has allowed me and my friends to meet up for a sumptuous snack at one of my new favorite haunts: Silverspoon.

A cozy and hidden spot in a busy food haven

This little cafe tucked away in a quiet side street near the busy food hotspot Tomas Morato Avenue is the brainchild of young entrepreneur Decie Montefrio, who transitioned her thriving food delivery business during the pandemic into a lovely brick-and-mortar restaurant that serves a combination of Filipino and intercontinental dishes.

I just love its minimalist aesthetic and comfy furnishings, it offers you a bright yet cozy setting for a satisfying meal or a light repast, whether you’re going solo or with friends.

Plus, the place also offers WiFi access so you can enjoy a change of scenery as you study or do some remote work here.

Expanded menu to include snackables

Recently, Decie and her team expanded Silverspoon’s menu to also include lighter dishes, perfect for a quick lunch or snack in between meals.

#ItsAnIllosThing: Buffet Weekends at Illo’s Home, Greenhills

During the past two years which saw the world reeling from the pandemic crisis, celebrations at home offered a few, much-needed bright spots for Pinoys.

These occasions modestly spent with family and a few close friends gave us a look back into what our pre-pandemic lives used to be and a promise of what we can look forward to once this crisis is behind us.

For many of us, Illo’s Party Trays were a great part of these home celebrations during quarantine. Founded by food connoisseurs Chef N and Anne Rovillos in December 2019, this venture showcased the possibilities that good food presents to people who are stuck at home for celebrations.

Guided by its principle of families dining at home as they celebrate life everyday, Illo’s Party Trays launched its “Dine at Home,” “Celebrate at Home,” and “Date at Home” concepts.

Illo’s Party Trays’ novel concepts generated social media buzz which further drove this food delivery service to remarkable growth.

The first of these restaurants opened in BF Homes Paranaque in February 2022, bringing an excellent selection of local and international cuisines to its dining public.

The second outlet of Illo‘s Home opened a month later at Greenhills Elan Hotel, where diners can enjoy the same scrumptious fare that Illo’s has become known for in a homey yet decidedly posh setting, which include walls with cascading water feature and displays of paintings by local artists.

To add one more reason for the metro‘s foodies to venture out of their homes and dine out, Illo’s Home hosts Weekend All-Day Buffet at its Greenhills branch.
