A delicious taste of home with Tia Carmen’s Apple Crumble

Home is where the heart is, so they say.

Well, given the restrictions on mobility due to the community quarantine, many of us found ourselves stuck at home, though our hearts may be somewhere else.

If you’re yearning to be back in the hustle and bustle of the metro, or to roam free amidst wide open spaces, I’m sorry to say it but you may have long to wait.

In the meantime, why not take comfort in the haven of home by relishing the sweet delights you can enjoy there, with the people closest to you?

Tia Carmen Fresh Pastries

That’s the idea that the folks behind the new online store Tia Carmen Fresh Pastries wants to push. The enterprise is named after Carmen Escriva (sister of Saint Josemaria Escriva de Baleguer) who supported her brother’s ministry and championed a love for home.

Tia Carmen Fresh Pastries

Launched only last July 14, Tia Carmen produces homemade baked pies and crumbles that bring back happy memories of childhood and sharing good food with loved ones.

Its Apple Crumble (Php550), for example, is a masterpiece flavors and textures. From its buttery, slightly crunchy and crumbly topping that gives way to soft and sweetly-spiced apple filling, it is the quintessential comfort food, that can satisfy the sweet cravings of four to six people.

Tia Carmen Fresh Pastries

Tia Carmen Fresh Pastries

Did you know that the crumble originated in Great Britain during World War II? Because of the food rationing instituted by the government, the ingredients needed to make pie crusts were in short supply. Some enterprising bakers used what flour, fat and sugar they had into making a crumble topping and a new dish came to be.

Tia Carmen Fresh Pastries

The apple crumble is best enjoyed warm, with the aroma of apple, cinnamon and butter wafting to your nose. Add a generous dollop of vanilla ice cream to it and you’ve got an irresistible treat!

(Note: I’ve read in several sources that Americans sometimes enjoy apple pie with sharp cheddar. Curious if the same can be applied to apple crumble, but lacking authentic cheddar in my pantry at the moment, I substituted a few slices of processed cheese on a slice of apple crumble. The result? An interesting interplay between sweet and salty that I won’t mind exploring further.)

If your constitution – or refrigerator – can’t handle a whole pie, or you just want an intimate dessert for two – or just one! – get an Apple Crumble Cup (Php200) instead.

Go ahead and get yourself a taste of Tia Carmen’s Apple Crumble so you can also get a taste of the warm comfort of home.

Tia Carmen Fresh Pastries

Tia Carmen’s Fresh Pastries also offers Banana Crumble (Php450 for whole | Php180 for cup) and Apple Pie (Php500).

Its ovens are baking every Monday, Wednesday and Friday, with pies for delivery on the same day to ensure freshness.

#QuarantineCookbook: Calamansi Muffins

It’s already the rainy season and the metro is still in the grips of the COVID-19 pandemic.

This is not the time to let up on our nutrition, especially Vitamin C. Also known as ascorbic acid, it is touted as one of the safest and most effective nutrients. Vitamin C can help in fortifying immune systems weakened by stress, preventing serious complications arising from cold, reducing the risk of stroke, as well managing skin aging.

How fortunate that we Pinoys are blessed with an abundance of ready sources of Vitamin C: the calamansi!

Pickfresh Calamansi Juice

But don’t hassle yourself juicing all those little fruits by hand. You can have concentrated calamansi juice by the bottle, thanks to Pickfresh.

Pickfresh Calamansi Concentrate is organic and all natural with no use of extenders or preservatives. Available variants include unsweetened (best for diabetics), sweetened (for the kids) and with honey.

Pickfresh Calamansi Juice

To make yourself a glass of refreshing calamansi juice, just stir in two to three parts water into one part of the concentrate, adjust to taste, then add ice. Each bottle of Pickfresh yields fifteen to twenty glasses of calamansi juice.

Pickfresh Calamansi Juice

Now, some people might not be too excited about drinking calamansi juice (it may be an acquired taste) but how about some calamansi muffins?

Pickfresh Calamansi Juice

Sunday family meal with Mang Ding’s

I used to look forward to Sundays because that used to be the day when the fam and I will go out for lunch.

Sunday was the day when I don’t need to worry about what to prepare for my hungry, yet discriminating hubby and kids because we will let our resto choice for the day take care of all that for us.

Well, as we all know, dining out has been curtailed due to the community quarantine (and rightly so, considering the steadily rising number of COVID-19 cases). While I’m thankful for the relative safety of home, I do sometimes seek a break from the toil of preparing food for the fam.

Thankfully, Mang Ding’s Pinoy BBQ, Marikina’s destination for street food that’s Malinis, Masarap at Mura, has innovated its product line to include frozen packs of its signature ihaw dishes that #TeamBahay momshies like me can cook at home.

Mang Ding’s Marikina

These packs are vacuum-sealed for freshness, with meats already seasoned and marinated according to Mang Ding’s signature recipe, ready for grilling.

Take the Liempo (Php270/500 grams), for instance. I just thawed out the pack, brushed my grill pan and the hefty pork belly slices with cooking oil.

Mang Ding’s Marikina

Then, I grilled the pieces (just using my stove, mind you!), until they get to that beautiful golden brown color.

Mang Ding’s, Marikina
Mang Ding’s Marikina

I cut the liempo up into bite-size pieces before serving with the dipping sauce (included in the pack) and hot rice for a lovely Sunday family meal.

Mang Ding’s, Marikina
Mang Ding’s Marikina

Each piece is flavorful and tender, and the pork rind has that satisfying crunch!

Mang Ding’s Marikina
Mang Ding’s Marikina

Step-by-step instructions are in this video, but really, preparing this is a piece of cake!

I also got a frozen pack of Chicharong Bulaklak (Php280/500g). Since the pieces were already well seasoned, I just thawing out the pack, deep fried the pieces for five minutes until crunchy, then drained off the excess oil before serving.

Mang Ding’s Frozen Packs

This is quite a special treat for the fam as chicharon bulaklak is quite hard to come by.

Cooking up a special family meal gets so easy with Mang Ding’s frozen packs. (Check out my home barbecue and isaw experience, also with Mang Ding’s frozen packs).

What will make a Sunday meal even more specials is dessert. Well then, check out Mang Ding’s Belgian Chocolate Cake (Php680)! Moist chocolate cake topped with a decadently rich chocolate icing that will satisfy any choco-holic’s craving.

So #TeamBahay momshies, don’t sweat over your fam’s Sunday meal. Just order a frozen pack and dessert from Mang Ding’s!

Where to Go in the Awesome Tarlac Neighborhood

Tarlac offers an awesome neighborhood in Northern Luzon. Pangasinenses, Ilocanos, Kapampangans, Bulakenyos, and even Tagalogs flock to the province to enjoy a time for adventures and leisure.

If you’re looking to explore the neighborhood in Tarlac, here are some of the best spots that you need to visit.

Capas National Shrine

If you want to learn about the stories of the war, then Capas National Shrine is the best place to visit in Tarlac. This was built to commemorate those who lost their lives in the Bataan Death March. It’s an even more meaningful place as the site used to be a concentration camp, even reminding us today about the repercussions of war.

Isdaan Village

Looking for an awesome place with great food? Then, Isdaan Village is the place to go. It’s a floating restaurant that offers a variety of Filipino and other Asian cuisine. Dining in at Isdaan is also an experience with singing cooks and overlooking picturesque views. The place is perfect eating with your family or a large group.

Aquino Ancestral House

If you want to appreciate the democracy of the Philippines more, then you should head on over to Aquino Ancestral House. This is the house where the late Senator Benigno “Ninoy” Aquino lived before he entered into local and national politics.

Kart City Tarlac

Do you enjoy the adrenaline rush? You should check out Kart City Tarlac! The place is perfect for kids at heart with their F1 carts available for driving! If you’re bringing your children, you won’t need to worry as there’s a designated place specially designed for them.

Mount Pinatubo

As the province borders Mount Pinatubo, this means more adventure for you! You can enjoy a nice ride by 4×4 trucks going uphill and a hike by foot going to the summit. What’s even more wonderful is meeting friendly Aeta locals along the way.

Tarlac has indeed an awesome neighborhood that makes for a perfect getaway spot in Luzon. More than visiting from time to time, the great thing is that you can also easily secure a home in the province!

If you want to purchase a home  in Tarlac, there are affordable houses that BellaVita offers. Settling a home in the province means that you’re one skip away to these amazing destinations – which is a great benefit for you.

#QuarantineCookbook: Lemon Square #SiksikSaSarap Recipes

One of the few bright spots of the community quarantine and being stuck home is the emergence of many a newbie baker’s latent genius in the kitchen.

I’ve been through a baking phase a few years ago but I gradually lost interest due to lack of time and the increasing demands of my job.

When the quarantine was put in place, however, I found myself with more time on my hands and eager to get back into the kitchen to whip up tasty treats for the fam. Being the sweet tooth I am, these dishes tend to be desserts.

I was also recently issued with a challenge: create a snack or dessert using Lemon Square Cheesecake as one of the ingredients.

Lemon Square

Lemon Square is a thirty-five-year-old brand that has been serving up real goodness through affordable and nutritious snacks. It has a family of flavors that cater to every personality and snacking quirk in the brood, starting from its flagship variant, Lemon Square Cheesecake, to snack cakes Lemon Square Whatta Tops and Lemon Square Lava Cake, as well as Lemon Square Whatta Flakes crackers and Lemon Square Cookie Bites.

Well, challenge accepted!

Here are – not one, not two, but – three desserts using four of Lemon Square variants. Check them out:

Crema de Fruta with Lemon Square Cheesecake

Lemon Square Recipes

Lemon Square Recipes

Ingredients:

1 pack (10 pcs) Lemon Square Cheesecake
1 small can (432 g) of fruit cocktail (drain the fruits and reserve 4 tbsp of its syrup)
1 small can (108g) condensed milk
1 pack (250ml) all purpose cream

Procedure:

In a bowl, mash the Lemon Square Cheesecake pieces until they break apart into small crumbs. Add the reserved fruit cocktail syrup until the crumbs form a loose, streusel-like mixture.

In another bowl, mix together the all purpose cream and condensed milk until well-blended.

In an eight-inch tin can, assemble the crema de fruta in alternating layers of crumbs, sweetened cream and fruit pieces.

Refrigerate overnight to allow the dessert to settle. Serve well-chilled.

Tipsy Chocolate Cake with Lemon Square Lava Cake and Chocolate Cookie Bites

Lemon Square Recipes

Lemon Square Recipes

Ingredients:

1 pack Lemon Square Chocolate Cookie Bites
4 pcs Lemon Square Lava Cake
1/2 cup heavy whipping cream
1 tbsp Baileys Irish cream
1 cup semi sweet chocolate chips

Procedure:

Crush the Lemon Square Chocolate Cookie Bites until they form a fine powder. Set aside.

In a bowl, mash the Lemon Square Lava Cake until they form into thick crumbs. Press them to the bottom of an eight-inch tin can. Set aside.

To make the tipsy ganache, add the Baileys to the heavy cream in a saucepan. Stirring periodically, heat the mixture over low fire until just before the it begins to boil. Remove from heat and stir in the chocolate until well-combined.

Allow the mixture to cool for three minutes before pouring it on top of the mashed Lava Cake in the prepared tin can.

Using a strainer, dust the top of the ganache with the powdered Chocolate Cookie Bites.

Place the tin can in the refrigerator overnight until the cake is fully set.

Serve chilled.

Note: You can lessen the amount of Baileys you put in or take it out all together to make this dessert more kid-friendly.

Lemon Square Recipes

Ingredients:

For the crust:

6 packs crushed Lemon Square Whatta Flakes Spanish bread
1 stick of softened butter

For the ice cream:

Three avocados peeled and seeded (equivalent to 2 cups)
1 300ml and 1 108ml cans of condensed milk
4 cups heavy whipping cream

Procedure:

In a bowl, combine the crushed Whatta Flakes Spanish bread with the butter. Press the crumb mixture onto the bottom of five 8-inch cake tins then set aside.

In a blender, puree the avocado while mixing in the condensed milk until well-blended. Set aside.

Whip the heavy cream at high speed until it thickens. Gradually mix in the avocado puree until well-blended.

Transfer the mixture into the prepared tin cans, gently pressing the mixture into the containers and smoothing out the top using a spatula.

Freeze for at least six hours or overnight. Serve frozen.

Note: This is an update of the Avocado Ice Cream Cake recipe I published a few months ago, incorporating some improvements I discovered after making this dessert quite a number of times.

The Jelly List: Unusual desserts to soothe your stress during quarantine

It’s been four months into the quarantine and with all the craziness that’s happening in and out of the country, many of us are feeling the literal and metaphorical heat.

I’m a firm believer in how the right kind of food improves one’s mood. And it just so happens that stressed spelled backwards is dessert.

Being a sweet tooth myself, of course I have a considerable bias towards desserts. (And words to the wise: biases are not inherently bad!)

Before I let my stress get the better of me, let me calm my mind down and yet excite my appetite as I present my picks for out-of-the-ordinary sweets.

These are usually reinterpretations or interesting tweaks to established dessert recipes, bringing something new to classic faves.

I also picked the ones that are currently available for pickup and delivery since most of us are stuck in our homes.

Frozen Brazo de Mercedes from Ombu Kusina

Ombu Kusina, Tomas Morato

Ombu Kusina prides itself on its modern takes on Pinoy cuisine and this dessert is a prime example of that. Delightful layers of frozen soft meringue alternating custard filling, ice cream and graham cracker crust will make a great end to any meal.

Ombu Kusina is located at Ground Floor, Sequioa Hotel, Mother Ignacia Street, Brgy. South Triangle, Quezon City, open daily from 9am to 8pm for dine-in, delivery and pickup. For reservations and inquiries, call +63 2 84411789 or +63 922 8149086, or email omburestaurant@yahoo.com.

Black Forest Floor from Graffiti Desserts

Graffiti Desserts

Graffiti Desserts is a new entrant into the busy metro food scene which seeks to differentiate itself from other dessert shops by “taking inspiration from every direction, rethinking sweets and changing the dessert landscape in the process.” Its Black Forest Floor deconstructs and reimagines the classic Black Forest Gateau as the Shwarzwald’s lush forest floor. From the moist chocolate cake, amaretto-soaked cherries and crushed peanuts making up its “soil” which surrounds a “mud pool” of salted milk chocolate ganache, to its candy twigs and pebbles, dried rose petals and a green tea butter crumble “moss” hiding a gold cream dome egg, biting into this dessert is like stepping into fairyland.

To order, send Graffiti Desserts a message through Facebook or Instagram, indicating your number of orders, name, contact number and delivery address.

Turtle Pie Cheesecake-in-a-Jar from SugarSalt

Sugar Salt Bakery

Craving for something sweet but don’t want to over-indulge? Then SugarSalt’s Turtle Pie Cheesecake-in-a-Jar is just what you need. Made with dark chocolate, caramel kisses, caramel fudge and pecan nuts over freshly baked cheesecake in a crushed graham cracker crust and served in a cute little jar, it is a bite-sized taste of sweet heaven.

Martabak Manis from Sammy’s Cookin’

Sammy’s Cookin’ To order, call 0939 1483960.

Martabak Manis is one of Chef Sammy Isidro’s signature dishes influenced ny the years he spent as a musical performer in Indonesia. Made with thick pancake layers filled with chocolate sprinkles, crushed peanuts, cheese and condensed milk, this dessert is perfect for those late-night sweet cravings.

Japanese Cheesecake from Fukurou Nihonryori

Fukuruo Nihonyori, Cainta

Fukurou Nihonryori is a cozy little resto in Cainta which serves authentic Japanese dishes. One such dish is the Japanese cheesecake, a light and fluffy confection made in the traditional Japanese way and drizzled with dulce de leche.

Putoflan from Batter & Bake

Batter & Bake Putoflan

Another promising newbie in the online food selling business, Pasig-based Batter & Bake entered into the fray with the Puto Flan among its initial offerings. This dessert lets you enjoy two Pinoy classic desserts – the puto (rice flour cake) and leche flan (steamed milk custard) – in one neat little package.

To order, message Batter & Bake on Facebook or Instagram or call +63 917 3115064.

Spiked Carabao Milk Ice Cream from The Blissful Story

Greenfield Weekend Market

Ice cream is every kid’s favorite dessert, but Pasig-based micro-creamery The Blissful Story churns out something special for us grown-ups: a little bit of Tequila Rose to go with its carabao-milk based Strawberry Rose ice cream, giving its sweet fruity flavor and nutty cacao nibs some added oomph.

You can order this tipsy ice cream at The Blissful Story’s Facebook Page.

Pinoy street food for #TeamBahay from Mang Ding’s Pinoy BBQ

Momshies, do you sometimes wish that you could enjoy your guilty pleasures – like Pinoy street food – in full view of your kids?

Well, no need to hide your street food fix from your kids. In fact, you can take this opportunity to introduce them to Pinoy street food.

It’s all thanks to Mang Ding’s Pinoy BBQ and its frozen ready-to-grill Malinis, Masarap at Mura street food.

Mang Ding’s is where I had my first (and only!) taste of isaw. There, during a foodie meetup with fellow food bloggers, I had a whole lot of fun rediscovering tasty Pinoy street food, all freshly cooked at Mang Ding’s Instagrammable al fresco restaurant.

Mang Ding’s, Marikina

Mang Ding’s, Marikina

When Marikina was placed under quarantine and restrictions were placed on mobility and dining out, Mang Ding’s started offering its fare in frozen and ready-to-grill packs.

Mang Ding’s Marikina

Each pack is frozen and vacuum-sealed, its contents seasoned and marinated with Mang Ding’s signature sauce.

Tonight, I flexed my indoor grilling muscles, got out my grilling pan and got to grilling.

And wouldn’t you believe it: it was actually quite easy!

First, I thawed out the frozen pack containing the pork barbecue and isaw. Then, I added six tablespoons of cooking oil to the basting sauce provided. I then brushed both sides of the meats while they were grilling until they’re done.

From the satisfying sizzle you hear as they grill, to the appetizing smell of barbecue wafting throughout the kitchen that had my eldest #ExhibitA blurt out “Ang bango, Ma!“, to the beautiful spread these make on my dining table, and to the my fam’s joy as we bite into the tender sweet-savory pork barbecue, isaw manok and isaw baboy, my fam’s Mang Ding’s Pinoy BBQ dinner is a feast for the senses.

A Subway Snack Attack

Busy working at home but in need of some nourishment to plow through your tasks?

Not to worry because you can easily have a tasty and filling sub from Subway delivered right to your doorstep!

Subway, Libis

The sub, or the submarine, is a sandwich made with a length of bread split lengthwise and filled meats, cheeses, vegetables and condiments. It is so-named because of its distinctive shape, but has also been called hoagie, hero or grinder.

Subway, the world’s largest single-brand restaurant chain, specializes in submarine sandwiches, some of which, my kiddos and I were able to sample when Hubby ordered a few subs for our mid-afternoon snack. These include:

6-inch BLT (Php276). People say that great things come in threes. In the case of this sandwich, those three things are crispy bacon, crisp lettuce and juicy tomato slices served with mayo on freshly baked honey oat bread.

Subway, Libis

6-inch Roasted Chicken Breast (Php149). A six-inch sub with a tender, juicy roasted boneless chicken breast patty, with lettuce, tomatoes, green peppers, onions and mayo is served on freshly baked honey oat bread.

Subway, Libis
Subway, Libis

Truth be told, Hubby ordered a 12-inch Spicy Italian (Php264), a footlong sub with spicy salami and pepperoni with crispy veggies on a freshly baked footlong bread, but I didn’t get a chance to take a picture of it anymore. Guess why, hehehe!

Well, I do plan on getting a fews subs again soon, especially since it has an ongoing Two for Php200 promo.

Feel like a sub today?

This Subway branch is located at Ground Floor, Zeta Tower, Bridgetowne Business Center, Libis, Quezon City, and is open from 9am to 4pm for takeout and delivery via GrabFood and FoodPanda.
