Fine dining at Bistro Manuel, Poblacion

I’ve never had the pleasure of dining at Lolo Dad’s Cafe in Malate which closed its doors a few years back.

From what I hear from veteran (ehrrm!) foodies and what I’ve gathered online, Lolo Dad’s is known for its fine dining, culinary masterpieces and the awards they merited.

Too bad I didn’t get to experience Lolo Dad’s but there is a silver lining to this predicament: in 2016, Chefs Ariel and Mia Manuel of Lolo Dad’s opened a new restaurant in Poblacion called Bistro Manuel.

It is a quiet establishment, almost hidden being situated away from Poblacion’s more casual (and noisier) bars and restaurants. The place is well-suited for workday lunchouts, intimate dinners for two or elegant family celebrations.

Together with my fellow foodies, I recently visited Bistro Manuel where we were welcomed by Chef Ariel himself. We also sampled the resto’s signature dishes which feature many of the old favorites from Lolo Dad’s as well as new creations that showcase the chefs’ mastery of their craft.

Starters. Tasty dishes to kickstart the meal.

Amuse bouche and freshly baked bread and butter (compliments of the chef).

Double Espresso Soup (Php295). Tomato and mushroom cream-based soups served in separate espresso shot glasses. Definitely a new way to enjoy soup!

Romaine Ceasar Salad (Php380). Crispy pancetta and six-minute boiled egg tossed in romaine lettuce with anchovies, lemon and parmesan cheese dressing.

Spinach and Warm Mushroom Salad (Php380). Mushrooms sauteed in smoked bacon on top of spinach leaves and doused with roasted garlic vinaigrette.

Lolo Dad’s Cafe Baked Oysters (Php230 per piece). A real treat to the taste buds, each oyster is accompanied by angel hair pasta under a layer of melted cheese, and accompanied with a cube of foie gras.

Sorbet (compliments of the chef). A citrus sherbet to cleanse the palate.

Mains. Hearty and flavorful viands showcase Chef Ariel’s mastery of European cooking techniques.

Mild Spice Arabbiata (Php550). Penne tossed in tomato base sauce seasoned with basil, garlic and chili flakes. A light dish that portended of great things to come!

Lamb Shawarma Grilled Pizza (Php700). In this pizza with a Mediterranean feel, lamb belly, tomato and onions are placed on a charcoal-grilled thin crust and served with yoghurt and chili dip.

“Only for the Rich” Pizza (Php1,290). One of the resto’s more playful dishes, this dish features many luxurious ingredients that led to its name. Lobster, duck liver, scallops, prosciutto and smoked salmon with carabao’s milk cheese and truffled tomato sauce on top of charcoal-grilled thin crust garnished with edible flowers.

Pan-fried Fillet of Salmon (Php695). A hefty piece of well-seasoned salmon, seared and served caramelized onion, potatoes and bacon butter sauce.

US Rib-Eye Prime Steak (Php2,200). 300 grams of premium steak grilled to medium doneness and served in rendered fat with truffled mashed potatoes and chilled Hollandaise. A carnivore’s dream come true!

Zen dining experience at ICHO Japanese Restaurant, Greenhills

Located along the busy Annapolis Street, no more than a minute’s ride after turning right from the traffic-infested EDSA is a haven for Japanese food lovers.

Kani Salad (Php235). Crabsticks with Japanese cucumber and bits of mango that features the interesting interplay of salty-sweet flavors.

Spicy Tuna Salad (Php340). Spicy tuna tartar served with mixed greens. This one has quite a spicy kick but diners can always request for the spiciness to be toned down while ordering.

Hiroshima Kaki Motoyaki (Php285). Baked oysters with creamy mayonnaise-based sauce. Very rich and flavorful!

Sashimi Goru Mori (Php720). Five kinds of sashimi which illustrate the freshness of the ingredients and the chef’s mastery of presentation. I may have developed a taste for sea urchin because of this dish!

Robata Platter (Php885). Mixed grilled meat, seafood and vegetable skewers which include tender wagyu cubes and the resto’s namesake: gingko biloba!

Vanilla Ice Cream Sandwich (Php300). A delightful confection made of vanilla ice cream in between slices of chocolate and vanilla sponge cake with mochi. A sweet and fitting end to a lovely meal!

An array of brick oven-baked Neapolitan pizza at Amare la Cucina in Baguio

Pizza Napoletana, better known as Neapolitan Pizza, originated from Naples, Italy, hence the name. Its preparation involves fresh ingredients: basic flatbread dough, tomatoes, mozzarella cheese, olive oil and fresh basil. It is normally sized at 10-12 inches, making it closer to a personal pizza.

During our weekend getaway in the City of Pines, the fam met up with relatives at Amare La Cucina. Its claim to fame is its wood fire brick oven Neapolitan-style pizza made with fresh dough.

Its name translates to “love the kitchen” – the same passion for food and experimentation that drove owner Edmark Bustos to open his own restaurant which is now the default destination for extraordinarily good pizza in Baguio.

Our group consisted of two families with kids ages 5 to 18 years so finding dinner choices that will satisfy everyone was a challenge. Fortunately, Hubby, with the help of his cousin, chose a winning menu:

Beef Carpaccio (Php300).  Thinly sliced raw Beef Tenderloin with extra virgin olive, finished with shavings of Parmigiano-Reggiano and salt and pepper. This was more for the adults in the group. It went particularly well with the beer that the dads in the group ordered.

Mozzarella Dip. Melted seasoned mozzarella cheese served in heated pans where you can dip thin slices of flatbread. This was very enjoyable for the kids, especially my little boy who loves cheese.

Chicken Skewers (Php350). Grilled chicken pieces served with a tangy sauce. This served as our main protein for the meal.

Margherita Pizza (Php325). Pizza made with plum tomatoes, mozzarella, extra virgin olive oil and basil.

Tre Formaggi (Php440). Pizza made plum tomatoes topped with herbs and three types of cheeses – mozzarella, cheddar and parmigiano reggiano.

White Pizza (Php405). Pizza made with mozzarella, bacon, garlic, extra virgin olive oil and a dash of oregano.

Foie Gras (Php595). Pizza made with mozarella, basil, white truffle oil and foie gras (duck liver).

Mint Iced Tea (Php85). Refreshing blend iced team infused with fresh mint.

After dinner, we stopped by the all-women art exhibit we chanced upon earlier, and admired the artworks by local contemporary female artists.

Trivia: Did you know that until the 1700s, pizzas were not topped with tomatoes? When tomatoes first arrived in Italy, they were mainly grown and used as ornaments. They were also thought to be toxic until Italian peasants started putting them on top of their flatbreads.
