At the helm of this captivating event was Beverage Director Ian Libang, a celebrated mixologist renowned for his international accolades. Libang’s vision transcends merely transforming Filipino ingredients into cocktails; he weaves local traditions and culture into each creation, offering a storytelling experience that immerses guests in Filipino heritage in a refined and sophisticated manner. “Our goal at Bizarre is to do something different,” Libang shared. “We incorporate our local traditions and culture into our cocktails, giving our guests a unique glimpse into Filipino life.”

Libang’s creations were complemented by the culinary genius of Mikel Zaguirre, Bizarre’s Founder and a chef of great repute. Together, they crafted a harmonious blend of cocktails and bar bites that delighted the palates of their guests. Zaguirre emphasized, “We prefer to use the term ‘Pinoy’ rather than just Filipino, as it encapsulates the heart and soul of our heritage. Our approach at Bizarre allows people to truly experience our Filipino-ness through our menu.”

The cocktail degustation, aptly named “The Roots,” was a five-course journey celebrating the timeless flavors of the Philippines, infused with contemporary twists. Guests were welcomed with “Quezo,” a delightful tapioca snack paired with kesong puti, setting the stage for an evening of culinary exploration.

The first course featured “Atchara,” a vibrant orange cocktail inspired by the popular Pinoy sour side dish, mellowed by Aperol spritz, spices, and ripe papaya, paired with “Inihaw,” a succulent trio of roasted kurobota pork, tenderloin, and chicken thigh.

Following this was “Sawsawan,” a cocktail spotlighting patis (fish sauce) and topped with calamansi sorbet. This sour-driven delight emerged as the crowd favorite, accompanied by “Kinilaw,” seasoned raw tanigue with leche de tigre and fried shallots.

The main course, “Binhi,” inspired by rice grains, featured a malt whiskey-driven cocktail garnished with chocolate bitters. It was paired with a creative twist on kare-kare, the “Kinunot” ox-tail pie with bagoong demi sauce, the evening’s most beloved pairing.

The dessert portion began with “Ni-yog,” a piña colada-esque cocktail featuring tequila, leche flan, and coconut, blended into tablea colada foam and torched for a delightful contrast. Paired with “Nilupak,” a cashew-coconut tart topped with pineapple and coconut cream, it was a delightful finale.

The degustation concluded with “Ampaw,” a celebratory toast inspired by the local deep-fried tutong (burnt rice) treat. This exquisite cocktail featured mesoyi and ampaw sorbet in milk-washed bourbon, providing a sophisticated end to an extraordinary evening.

The atrium was transformed into a vibrant candy land, complete with whimsical life-sized candies, colorful hot air balloons, and an array of exciting activities. The world’s most iconic lollipop brand, Chupa Chups, brought fun to new heights with this year’s Lolliday celebration.

Adding to the excitement were a series of video clips shared on social media. These clips featured an augmented reality hot air balloon, adorned in Chupa Chups’ signature style, flying over landmarks like People’s Park in Davao, CCLEX in Cebu, and Rizal Park in Manila before landing at the SM Mall of Asia. We were welcomed into the restaurant by the Salad Station, a vibrant display of fresh greens, sliced vegetables and fruits, as well as a variety of nuts and dressings. The importance of balancing our meal with lighter, refreshing options was evident here. The assortment of crisp, colorful ingredients enticed us to create our own salads, setting a healthy tone for the feast ahead (or at least minimizing our guilt from indulging ourselves later in the meal).

Pizza & Pasta Station

The Pizza & Pasta Station, across from the salad station, is where the aroma of freshly baked pizzas fill the air. The customizable pasta dishes were a highlight, with chefs preparing pasta to order right before our eyes from our selections of pasta noodles, sauces and toppings. The delightful variety of breads, cheeses, jams, and cold cuts off to the side added to the experience, offering a taste of Italy’s finest.

The four-cheese pizza, with its rich and gooey texture, is another highlight.

Japanese Station

The Japanese Station, on the other hand, was a sensory delight as well. From the delicate slices of sushi and sashimi to the freshly made crispy veggie, fish and shrimp tempura, every dish was a work of art. The meticulous presentation – from the displays of sushi boats and the preparation of Torched Cheese Salmon – enhanced our dining experience, making it as visually pleasing as it was delicious.

Indian Station

The Indian Station introduced us to a world of spices and bold flavors. Dishes like Baingan Bartha, Aloo Curry, and Gobi Palak Masala tickle the palate, complemented by various chutneys that go perfectly with freshly made buttery naan. Each bite is a celebration of India’s rich culinary heritage.

Asian Station

At the Asian Station, we find a delectable array of Chinese, Southeast Asian, and Filipino dishes. The Filipino favorites such as Crispy Pork Belly was a standout, embodying the rich flavors of the Philippines. The make-your-own Singaporean Seafood Laksa experience was a must-try, as well as selecting fresh crab and shrimps to be sautéed in a special garlic butter sauce or oysters for baking upon order.

The Western Station offers a taste of with American and European classics, such as grilled seafood, roasted meats, and the ever-popular US ribeye steak. The Roast Porkloin in Tarragon Gravy, Roast Chicken with Coriander and Lime, and Mediterranean Baked Fish are just a few of the tasty dishes that showcase the diversity of Western cuisine.

It’s been around for thirty-one years, but the best thing about it is that it has recently undergone a transformative restoration, blending timeless elegance with modern functionality. The new design seamlessly balances contemporary style with a soothing ambiance, ensuring guests enjoy a sanctuary of tranquility during their stay.

Together with my foodie friends, I recently enjoyed a memorable overnight stay at Holiday Inn Manila Galleria as part of our #AWeekendThatNeverEnds experience. Our spacious 2-bedroom suite was so comfy, we were reluctant to leave its comforts, so we stayed in and ordered room service for our late-night dinner, which is quite a new experience for our group.

A Weekend That Never Ends
Our in-room dining experience

The Holiday Inn Manila Galleria boasts an expansive in-room dining menu, accessible via a QR code provided in the room. It features tasty appetizers, salads, soups, and various cuisines, including Asian, Indian, Healthy, Pizzas and Pastas, and Western.

After agreeing on getting classic Filipino comfort food for our first dinner during our staycation, we simply called up the hotel’s Food and Beverage department and placed our orders. In just a few minutes, our feast was wheeled into our room, carried by friendly and professional staff who ensured everything was perfectly set up for us. (He even gamely posed for our photos and videos!)

Given the busy day we had, we opted to eat family-style in the suite’s well-appointed dining area, clad in our plush hotel bathrobes and sleepwear for maximum comfort, sharing our Filipino food feast. Our spread included:

Salmon in Tamarind Miso Broth (Php856.31). Grilled salmon fillet and salmon head with creamy taro mash, baby red radish, and tender bok choi, immersed in flavorful tamarind miso broth, served with a side of white rice. It’s perfect for one of our group who was feeling under the weather.

Bagnet Kare-Kare (Php759.62). Crispy pork belly complemented by a rich peanut sauce, paired with summer vegetables and bagoong, served with a side of white rice. Who says you can’t enjoy this sumptuous dish while lounging in your hotel room?

Seasonal Fresh Fruits (Php486.16). A vibrant selection of sliced local fresh fruits – pineapple, honeydew, and watermelon – for our dessert. Quite a welcome break from the usual sugar-rush we get from our usual post-meal cakes and pastries.

I can definitely say that the privacy and comfort of dining in-room are unparalleled. Unlike eating out, we could enjoy our meal in our bathrobes and jammies, chatting and laughing without any interruptions. The sheer flexibility of also allowed us to eat at our own pace, taking as long as we pleased so we can catch up and swap stories. We didn’t even have to worry about cleanup; the staff came back to take away our used plates and put leftovers in take-away boxes (because we don’t like food waste!).

Plus – and this is a big deal for us foodies! – we were so at home in our surroundings, taking our awra shots, posing with the food and all sorts of shenanigans that foodies do as they create their content, with no fear of judgement as we’re all among friends. This made our in-room dining experience all the more enjoyable.
