The local and international music scene continues to evolve and thrive despite the limitations resulting from the global pandemic. In this post, I have listed the hottest news in music for the first month of 2021 for you music lovers to enjoy.
In 2020, Bryan Estepa released two new songs, continuing on from the success of his exceptional 2019 album Sometimes I Just Don’t Know. The second of those singles, ‘Admit Now, Pay Later’, received a video premiere on Rolling Stone Australia, was featured on NME Australia and had strong national radio airplay – including selection as one of the featured Singles of the Week on 2ser FM in Sydney. Now the Sydney-based Filipino songwriter reveals the second of his collaborative efforts with multi ARIA and APRA award-winning Australian songwriter Josh Pyke.
Estepa has always had an undeniable ear for hooks. Combined with classic pop and rock arrangements, (like his heroes You Am I, The Beatles and Wilco) his songs always possess a timeless quality. He’s proved it over and over again across six acclaimed albums and live shows in Australia, Japan, the USA, UK, Spain, Sweden and the Philippines.
On ‘Trick of the Light’, Estepa combines heavenly melodies and a melancholic air on this irresistible slice of indie guitar pop, singing about acceptance, letting go and allowing yourself to feel whatever it is that comes out while you’re treading new waters. As always with his songwriting, there are layered poetic brushstrokes in the way Estepa blends and informs his songs with multiple meanings, as he explains. “I also like the idea that the presence of light does not necessarily signal happiness or life but can also mean that emotions and perception can be blurred by its appearance.”
Working with Pyke, Estepa was impressed with the producer’s instinct and ability to enhance the inherent strengths of Estepa’s songs. “It’s exciting watching Josh work! You sense that his creative light is always on and he needs to get his ideas out quickly before it starts to flicker. He takes on what I think the song’s direction might be but adds a couple of detours that are normally right on the money.”
Pyke is quick to reciprocate the praise. “Bryan’s a great writer and collaborator. He’s got a classic pop sensibility but is really open to feedback and experimentation which made my job as producer really fun and free.”
Sonically, there’s a beautiful weightlessness to the production and instrumentation that gracefully carries the song. Guitars sparkle and lightly jangle amid some sublime piano, backing vocals and percussive elements that add unique detailing to the melodic richness of the track.
ZAYN scores another No.1 album in the Philippines with ‘Nobody Is Listening’
ZAYN’s third studio release Nobody is Listening makes history once again as it debuts at No. 1 on iTunes Philippines Top 100 albums chart a few hours after its release. Co-written by ZAYN, the project highlights his R&B influences and showcases deeply personal lyrics. Ritt Momney’s “Put Your Records On,” now a hit in the Philippines!
Ritt Momney’s rework of Corinne Bailey Rae’s “Put Your Records On” is now a certified smash in the Philippines. Most of us are making more trips to the kitchen these days. In addition to simply being home more, there are a few reasons we may be eating more often —boredom, in need of a distraction, or perhaps to deal with something a little deeper, like anxiety or depression. In any case, the temptations to eat while stuck at home are heightened for all of us, which can create the potential for unhealthy consequences if we stray too far from our usual diets.
One reason snacking has such a bad rap is because so many common ‘snack foods’ are high in fat, sugar, salt and calories. Prior to the coronavirus pandemic, many health-conscious consumers already stayed away from these types of products; however, now people are stocking up on whatever is available at the grocery stores– changing the way we all eat. Even with these limitations, the important thing to remember is that choosing the right foods – even when we’re snacking – will allow us to maintain our health during these uncertain times.
While some people think all snacking is bad – probably because they equate ‘snacking’ with ‘snack foods’ – but I’ve always been solidly in the pro-snacking camp. For one thing, a small nutritious, balanced snack can help keep you energized between meals, and help control your hunger at mealtimes. When the foods you choose are appropriate, if you are truly hungry, and if you’re able to maintain healthy snacking habits, that’s one less thing to worry about during this pandemic. If you’re worried about how much you’re eating throughout the day, here are five tips to help you snack smartly:
You may actually be dehydrated
Many of us will mindlessly walk to the cupboard and find something to nosh on thinking we need to feed a food craving. The truth is that you may actually be mildly dehydrated, and your body is really just craving fluids. Before you reach for the snack pour yourself a glass of water, or a sports drink with electrolytes, to see if that will help tide you over a little longer, or try a light watery snack, like a piece of fruit.
Healthy snacking can help you to work more nutritious foods into your day
Think of it this way: the more often you eat, the easier it will be to work in your daily servings of healthy foods like vegetables, fruits, and calcium-rich dairy products. Use this opportunity to turn snacking into a healthy practice by preparing snacks that provide a mix of low-fat protein (like nuts, soy protein products or nonfat dairy foods) and healthy carbohydrates (like fruit, veggies, and whole grains). The carbs will get digested first and satisfy your hunger right away, and the protein will give your snack a bit more staying power.
Snacks can fuel your physical and mental energy
It’s actually normal to get hungry about every three to four hours. When you eat regular meals and snacks, it can help keep your blood sugar more stable throughout the day. That’s a good defense against between-meal dips in blood sugar that can sap your mental and physical energy.
Have that second lunch
A substantial afternoon snack can help control portions at dinner. Many people manage to control their eating pretty well during the day but, when the day’s over and it’s time to relax, end up eating a huge dinner. For those folks, a larger afternoon snack—almost a small second lunch—makes it much easier to cut back at the evening meal. The afternoon stretch between lunch and dinner can be a difficult time, so having something a little more substantial like a protein shake, a cup of cottage cheese with some fruit, or even a low-calorie frozen meal. Then you can do your cutting back at dinner time. And, if after-dinner snacking is a problem for you, try brushing your teeth after dinner. It works as a great signal to stop eating.
Re-think your snacking habits
If you’re eating unhealthy, high calorie foods like sweets, chips, and sodas keep in mind that these high calorie snack foods can contribute to weight gain and they offer little, if any, nutritional value. You also should think about the reasons you’re eating and identify whether it’s something other than hunger. If you tend to snack when you’re not hungry (maybe you’re bored, stressed, angry or tired), it’s a habit you might want to think about breaking. Think of other ways to deal with your emotions – take a walk, call a friend, write in a journal or spend a few minutes meditating. Taking a break for a few minutes will give you time to evaluate whether you’re truly hungry or not.

Starting April 27, McDonald’s Philippines started offering its Breaded Chicken Fillet in Cook-It-Yourself packs. Customers can easily get packs of 15 pcs for only P315 through participating McDonald’s Drive-Thru, and Take Out while bigger packs of 60pcs are available in select SM Supermarket, SM Hypermarket, and Savemore branches.
Loved by customers as the main ingredient in McDonald’s McCrispy Chicken Fillet with Rice and McCrispy Chicken Sandwich, the Breaded Chicken Fillet Cook-It-Yourself packs are not just convenient to order, but also easy to cook! Just by deep frying the fillet portions for 6-7 minutes, you can enjoy a tasty and slightly spicy Chicken Fillet with a crispy outer crunch. While you can have it simply with a hot bed of rice or sandwiched in between steaming burger buns, there are also many other ways to enjoy this delicious fillet!
In partnership with McCormick, here are 5 easy home recipes you can try that will put a different twist to this McDonald’s staple.
Combine Teriyaki sauce and honey together in a small bowl. Mix until well blended.
Glaze previously fried Breaded Chicken Fillet with the honey-teriyaki mixture by pouring over or by basting with a brush. Serve hot.
Chicken Fillet Curry
Yields 8-10 servings
Ingredients:
3 Tbsp cooking oil
1 pc white onion, diced
8-10 pcs McDonald’s Breaded Chicken Fillet
1 pack McCormick Yellow Curry Recipe Mix
2 cups coconut milk
1 pc green bell pepper, diced
1 pc large potato, diced
Procedure:
Sauté the onions in a saucepan/pot over medium heat until translucent.
Mix the Yellow Curry Recipe mix and the coconut milk together then pour into the pan. Add in the vegetables. Allow to simmer until potatoes are cooked and sauce is slightly thickened, about 10 minutes. Turn off the heat and serve hot over the previously fried Breaded Chicken Fillet on a bed of rice.
Chicken Fillet Pastel
Yields 8-10 servings
Ingredients:
3 Tbsp cooking oil
1 pc white onion, diced
8-10 pcs McDonald’s Breaded Chicken Fillet
1 pack McCormick Creamy Garlic Perfect Pasta Mix
2 cups evaporated milk
1 pc carrot, diced
1 pc green bell pepper, diced
1 can Vienna sausage, cut into 3 (about ½” pieces)
Procedure:
Sauté the onions in a saucepan/pot over medium heat until translucent.
Mix the Creamy Garlic Perfect Pasta mix and evaporated milk together then pour into the pan. Add in the vegetables. Allow to simmer until vegetables are cooked and sauce is slightly thickened, about 10 minutes.
Toss in the chopped Vienna sausage and simmer for another 3 minutes. Turn off the heat and serve hot over the previously fried Breaded Chicken Fillet on a bed of rice.
Creamy Garlic Chicken Fillet
Yield: 8-10 servings
Ingredients:
8-10pcs McDonald’s Breaded Chicken Fillet
1 ½ cup milk
1 pack McCormick Creamy Garlic Perfect Pasta Mix
Procedure:
Mix the milk and the Creamy Garlic Perfect Pasta mix together in a small saucepot then place over medium heat.
Allow the sauce to simmer and thicken for about 3 minutes. Sauce is ready to use.
Pour sauce over the previously fried Breaded Chicken Fillet. Serve hot.
