With over three million followers across digital platforms, his influence extends from his popular digital show, Simpol, to his international appearances at Madrid Fusion and the Village Internationale de la Gastronomie in Paris. His work in promoting Filipino cuisine globally and his role as a resource speaker on Netflix’s Street Food showcase his dedication to elevating Filipino flavors.

Simpol Tips and Kitchen Hacks

Chef Tatung shared valuable tips and kitchen hacks that resonated with both seasoned cooks and beginners:

  • Patience is Key: “Add ingredients little by little when cooking; take time to develop the flavors,” Chef Tatung advised. He emphasized that patience is crucial for achieving the best results in cooking.
  • Adapt and Innovate: Chef Tatung encouraged cooks to be flexible. “Authenticity is not the basis for us to feed our families. Use what you have and let creativity guide you.” This approach is all about making the most of available ingredients and adapting recipes to fit your needs.
  • Seasoning Throughout: One of his essential tips was to season food step by step. “Season your food every step of the way, not just at the end,” he said. This method ensures that every part of the dish is flavorful and well-seasoned.
  • Understanding Fundamentals: Chef Tatung stressed the importance of mastering basic cooking techniques. “We need to understand the fundamentals. Whether cooking salmon or tilapia, improper seasoning or overcooking can ruin the dish.” His focus was on learning the basics to create delicious, well-balanced meals.

Engage and Taste: A Hands-On Experience

The “Taste and Learn” segment was a highlight of the event. Select participants had the opportunity to taste Chef Tatung’s dishes and gain insights into his cooking techniques. This interactive portion allowed attendees to experience the flavors firsthand.

Trivia games rewarded winners with Tindeli vouchers and Simpol aprons, while the raffle offered a variety of prizes. Attendees could win kitchen essentials like Masflex cookware, with major prizes including La Germania gas stoves and online cooking classes with Chef Jackie. These giveaways, along with product displays from sponsors, made the event even more enjoyable for everyone involved.

The Versatility of Lola Indang’s Secret Otap

Lola Indang’s Secret Otap can also be used in creative recipes. For example, I recently discovered how to make a delicious tiramisu using this traditional pastry. Here’s how:

Homemade Tiramisu Using Lola Indang’s Secret Otap

Ingredients:

  • 1 bar cream cheese, softened
  • 1/4 cup sugar
  • Pinch of salt
  • 1 cup whipping cream
  • 1 cup strong brewed espresso or dark-roast coffee
  • 8 pieces Lola Indang’s Secret Otap
  • Cocoa powder, for dusting

Procedure:

  1. Prepare the cream cheese layer: In a mixing bowl, combine the softened cream cheese, sugar, and a pinch of salt. Using a hand mixer, whip the mixture on low speed for about 5 minutes until smooth and creamy. Add the whipping cream and increase the mixer speed to medium, whipping until medium peaks form. Set aside in the fridge until ready to use.
  2. Assemble the tiramisu: Prepare a 9×13-inch serving dish. Pour the brewed espresso into a wide, shallow bowl. Dip each piece of Lola Indang’s Otap into the espresso, soaking until moist but not falling apart. Arrange the soaked otap pieces in a single layer at the bottom of the serving dish. Spread half of the cream mixture evenly over the otap layer. Dust with a thin layer of cocoa powder. Repeat the process with the remaining otap, espresso, cream, and cocoa powder, making the top layer of cream slightly thicker.
  3. Refrigerate: Cover the tiramisu and refrigerate for at least 3 hours. Before serving, slice into squares and dust with a fresh layer of cocoa powder.

Vista Land tops off second vertical development in the City of Pines

Vista Land, the Philippines leading integrated property developer, proudly announces the topping-off of its second residential development in Baguio City, Pinehill.

During the ceremony, Teresa Tumbaga, Division Head of Vista Land High-Rise Development, expressed her enthusiasm about the vertical community in one of the country’s most scenic locales. “As we go through the final construction stages of Pinehill, we are delighted to offer future residents modern living amid the stunning landscapes and refreshing climate for which the City of Pines is renowned for,” she stated.

TOPPING OFF CEREMONY
Flanked by Vista Land officers, High Rise Developments Division Heads Teresa Tumbaga and Margarita Romero (center), led the ceremonial concrete pouring at Pinehill Baguio

Baguio City : Summer Capital of the Philippines

After going up the undulating roads that separate La Union from Benguet, the palpable chill and setting fog herald a city high up the mountains. The striking contrast of urban structures upon the landscape of Cordillera range is eased by the age-old allure of the location, while the distinct scent of pines fills the air.

Once a hill station for American soldiers and civil workers, Baguio City has developed into a highly urbanized city 250 kilometers north of Manila, with people from all over the region converging here for trade, tourism, and education.

VISTAS
Living in Pinehill Baguio means waking up to breathtaking vistas.

Other than its cool climate, Baguio’s crowning glory is its rich culture deeply rooted in nature. From Benguet pine trees that span its panoramic views, the Panagbenga Festival celebrated every February, to the reverence accorded to the Igorot way of life, every fabric of Baguio is intricately woven into its tapestry of harmony and symbiosis.

The interconnectedness between people and their environment is especially considered in Hill Series, built in key locations within Baguio City. Three mid-rise condominiums are tucked behind scenic roads, blanketed by the chilly mist Baguio City is known for.

Swift and Convenient Expressways to Reach the City of Pines

The presence of road networks has considerably reduced travel time from Manila to Baguio to three hours. Travelers usually take NLEX (North Luzon Express Way) and proceed to SCTEX (Subic-Clark-Tarlac Expressway) via Exit 85, continuing their drive through TPLEX (Tarlac-Pangasinan-La Union Expressway) until the Rosario, La Union exit. From here, travelers have a choice between the winding paths of Kennon Road or the alternative route via Marcos Highway.

JOGGING
Jog amidst towering pine trees and the chilly mist Baguio City is known for.

Vista Land’s Hill Series blends nature and culture in Baguio City

Brenthill Baguio, the foremost development, is located on Yangco Road, fronting Brent International School. A 10-storey ready-for-occupancy property, Brenthill has various views of the city, from the metroscape to the mountainside.

Rising 12 storeys along Outlook Drive is Pinehill Baguio, offering a low-density spread of condominiums that overlook the verdant slopes east of Burnham Park while Canyon Hill along Pacdal Road, is a nine-storey development near Baguio Botanical Garden.

PINEHILL LOBBY
The high ceiling of Pinehill Baguio’s spacious lobby welcomes residents and visitors on the ground level.

Designed after cabin-style homes, the Hill Series are modern sanctuaries that provide retreat from the chatter of the urban and incorporate convenient amenities. The vertical communities lay out an array of studio, one-, and two-bedroom units replete with balconies, and facilities that include gyms, saunas, and game rooms. Spacious lobbies welcome residents and guests on the ground level, including the lounge areas and garden decks on the higher floors. The developments are tied together by commercial spaces on the first floor that cater to the needs of their residents.

With young professionals, starting families, settling retirees, and students of the Educational Hub of the North in mind, security features are added in these developments such as round-the-clock security, parking floors, and property management and building systems.

Sunday Family Brunch at Denny’s Estancia Mall

After attending Sunday mass, our family always looks forward to a hearty meal in a comfortable setting. One particular weekend, we decided to try Denny’s at Estancia Mall, a choice that perfectly fit our needs for good food and a cozy atmosphere.

A Brief History of Denny’s

Denny’s, originally opened as Danny’s Donuts in Lakewood, California, has grown from a small coffee shop into a global diner chain known for its 24/7 service. Founded in 1953 by Harold Butler and Richard Jezak, the restaurant was built on a promise to serve the best coffee, donuts, and service around the clock. Over time, Danny’s Donuts evolved into Denny’s, with over 1,700 locations worldwide. The brand’s reputation for always being open and ready to serve meals at any time of day has made it a go-to spot for diners across the globe.

In the Philippines, Denny’s has expanded its presence under The Bistro Group, a company known for bringing popular international casual dining brands to the country. With its consistent quality, Denny’s has become a favorite for those seeking a taste of American diner classics.

Convenient Location and Welcoming Ambiance

Denny’s Estancia Mall branch is conveniently located on the ground floor of the mall’s East Wing, making it an easy stop for families, especially on Sundays. The location is particularly appealing to the post-church crowd, who often look for a place to gather for lunch or brunch after mass.

The restaurant’s interiors reflect the classic Denny’s vibe, blending a retro diner feel with modern elements. Spacious booths, comfortable chairs, and well-spaced tables provide a relaxed environment for diners. Large windows allow natural light to flood the space, creating a bright and welcoming atmosphere during the day. The warm color palette, combined with modern artwork, adds to the overall 1950s diner ambiance, making it an inviting place to enjoy a leisurely meal.

A Family Feast at Denny’s

Our Sunday brunch at Denny’s Estancia Mall did not disappoint. With a menu that caters to all ages, each member of the family found something to enjoy.

First off, we got started on the complementary appetizers that consisted of crackers served with a tangy dip while we waited for our orders.

My son opted for Mom’s Spaghetti (Php295), a saucy pasta dish made with sweet and meaty spaghetti sauce, served with a side of garlic toast. The generous portion and rich flavors made it an instant hit.

To complement his meal, he ordered a Chocolate Milkshake (Php260). Made with premium chocolate ice cream and topped with whipped cream, the milkshake was creamy, indulgent, and everything a chocolate lover could hope for.

My daughter chose the Banana Hazelnut Waffle (Php275), a delightful combination of a classic waffle topped with banana slices, chocolate hazelnut spread, and zesty cream. The waffle was light and crisp, and the toppings added just the right amount of sweetness, making it a perfect choice for her.

My husband, a fan of hearty breakfasts, went for the All-American Slam (Php525). This dish included scrambled eggs with cheddar cheese, bacon strips, sausage, toast, hash browns, and seasonal fruits. The variety on his plate ensured that he had a bit of everything, from savory to sweet.

As for me, I decided on Grammy’s Kitchen Tenders (Php375). The buttermilk chicken tenders were crispy on the outside and tender on the inside, served with a side of honey mustard dressing, microgreens, and French fries. The dish was satisfying and flavorful, offering a nice balance of textures and tastes.

Denny’s is more than just a place to grab a meal; it’s a diner that prides itself on consistency and comfort. What sets Denny’s apart is its ability to cater to a wide range of diners, from those looking for a quick bite to families wanting to enjoy a relaxed, unhurried meal together. The 24/7 service offered at some locations is a testament to the brand’s commitment to being there for its customers whenever hunger strikes.

At the Estancia Mall branch, the family-friendly environment, combined with a diverse menu that has something for everyone, makes it an excellent choice for weekend brunches. The quality of food, the comfortable setting, and the welcoming service all contribute to a dining experience that feels both familiar and special.

Discovering Dolora’s Hauz of Pancit Malabon

If you’re a fan of Filipino food, you’ve probably heard of Pancit Malabon. One place that’s making waves with this dish is Dolora’s Hauz of Pancit Malabon. This family-run business has turned a beloved local recipe into a must-try for food lovers across Luzon. Let’s dive into what makes Dolora’s Pancit Malabon so special and why it’s worth adding to your meal plans.

Understanding Pancit Malabon: A Filipino Classic

Pancit Malabon is a Filipino noodle dish that comes from Malabon, Metro Manila. It uses thick rice noodles and is known for its rich, yellow-orange sauce. This color comes from achuete (annatto seeds), and the sauce gets its complex flavor from patis (fish sauce) and taba ng talangka (crab fat). The dish is topped with a variety of fresh seafood like shrimp, squid, and mussels, along with optional garnishes like pork, hard-boiled eggs, and crispy chicharrón (pork rinds).

While it might look similar to Pancit Palabok, there are some key differences. Pancit Malabon uses thicker noodles, and its sauce includes crab fat, which gives it a distinct taste. Mussels and oysters are also common toppings, making it a bit more seafood-rich.

Dolora’s Story: From Humble Beginnings to Widespread Popularity

Dolora’s Hauz of Pancit Malabon started nearly 30 years ago in a small carinderia in Marikina. Founded by Dolora Cecilia Buntan, this little eatery quickly gained a reputation for its unique take on Pancit Malabon. People from all over Metro Manila, and even beyond, would travel just to get a taste of her flavorful dish.

The entire family enjoyed the dish. The noodles were hearty and satisfying, and the variety of toppings was impressive. The sauce was flavorful enough that we didn’t need to add any extra calamansi juice. It was a hit all around, and everyone appreciated the rich, savory flavors.

#BaguioEats: Breakfast at Hill Station Bistro, Camp John Hay

Baguio City is well-known for its cool climate, stunning views, and delicious food. Among the city’s many dining options, Hill Station Bistro stands out as a must-visit destination. Located in Camp John Hay this restaurant offers a unique mix of history, culture, and satisfying meals. During our Baguio vacation, Hill Station Bistro served as my family’s breakfast venue, highlighting the reasons why this spot has become a favorite for both locals and tourists.

We also took this opportunity to treat my mom to breakfast, allowing us to spend some time together in Baguio before we go back to our daily grind in Manila.

History and Background

Hill Station Bistro traces its roots back to the original Hill Station Restaurant in Casa Vallejo, a historic site in Baguio. The restaurant has since expanded, with the Bistro at SM City Baguio being one of its newer locations. While the Bistro may be more modern, it continues the legacy of its predecessor by preserving a connection to Baguio’s colonial past.

Atmosphere and Setting

The ambiance at Hill Station Bistro is both eclectic, casual and comfy. The interiors are thoughtfully decorated with art, which adds a touch of culture to the dining experience. The Bistro is situated in a Ayala Technohub of Camp John Hay, taking full advantage of the scenic views that surround it which diners can enjoy, especially if they choose the al fresco dining option.

Food and Menu

Hill Station Bistro’s menu is filled with a variety of choices, but during our visit after sight-seeing at the Strawberry Farm, my family and I loaded up on its breakfast offerings. My son started with the Fried Chicken & Waffles (Php330), a dish that brought together the savory and sweet in a satisfying way. The deep-fried chicken quarter leg was crispy on the outside and juicy on the inside, perfectly complemented by the fluffy waffles, a dollop of butter, and a drizzle of maple syrup.

Hubby and I, on the other hand, enjoyed our Pinoy Breakfast (Php290), a classic Filipino morning meal. It came with a choice of Baguio Longganisa, Vigan Longganisa, or Home-made Pork Tocino. They both opted for the Vigan Longganisa, which had a distinctive, slightly tangy flavor that complemented the garlicky rice and savory egg. It was a hearty and flavorful dish that captured the essence of a classic Filipino breakfast.

Mom, on the other hand, went for the Eggs Benedict (Php370), a breakfast favorite. This dish featured an English muffin topped with perfectly poached eggs, home-smoked ham, and a rich hollandaise sauce, served with a petite salad on the side. The eggs were cooked just right, and the hollandaise added a creamy, tangy touch that tied everything together.

To complete our breakfast, Mom had a Cafe Latte (Php160) while my boy had a house blend Iced Tea (Php90). The latte was smooth and rich, providing Mom a much-needed caffeine boost, while the iced tea was refreshing and light, balancing out the heavier flavors of my boy’s meal.

Final Thoughts

Our visit to Hill Station Bistro was a delightful experience that combined the unique charms of Baguio with a comfortable dining atmosphere and delicious food. Whether you’re looking for a place to enjoy a hearty brekkie or simply want to relax with a cup of coffee while taking in the views, Hill Station Bistro is an excellent choice. If you’re in Baguio, I highly recommend stopping by for a meal—you won’t be disappointed.

A taste of the ocean in the heart of Mandaluyong at Itmiro Oyster Bar & Kitchen

ITMIRO Oyster Bar & Kitchen is not your typical restaurant in Mandaluyong. Located in a bustling part of the city, ITMIRO offers a unique experience by bringing fresh, high-quality oysters and comfort food favorites right to Metro Manila. From locally sourced Aklan oysters to premium selections from Japan, Ireland, and Australia, ITMIRO’s offerings are as diverse as they are delicious.

Having passed by its impressive facade on multiple occasions, as well as having dined with my family at the Goto Tendon branch which has a secret door that leads to it, my curiosity was sparked about this new eatery. There’s little wonder then, that I eventually wore Hubby down until he gave in to my not-so-gentle nagging to take me there for dinner.

From Boracay to Manila: A New Chapter

The story behind ITMIRO is one of passion and consistency. John Penaloza, the owner, is no stranger to the food and hospitality industry. Having already made a name for himself with Two Seasons Hotel & Resorts and Goto Tendon, ITMIRO marks his third venture, this time focusing on delivering the freshest oysters and a range of delectable dishes to the city.

What makes ITMIRO particularly special is its connection to the renowned Two Seasons Hotel in Boracay, famous for its Four Cheese Pizza and Oyster Sisig. These beloved dishes, which once required a plane ticket to enjoy, are now available in Mandaluyong, much to the delight of loyal patrons.

A Sophisticated and Welcoming Ambiance

ITMIRO’s interior design is a reflection of its branding—clean, minimal, and inspired by the ocean as evidenced in the subtle patterns and textures that decorate the space. The combination of lines and circles used throughout the restaurant’s design captures the essence of oysters and waves, creating a serene and sophisticated atmosphere that complements the dining experience.

Contemporary Elegance is at the heart of ITMIRO’s ambiance. The space is designed to be both cozy and sophisticated, making it an ideal spot for dining with family and friends. The decor, featuring oyster-shaped chandeliers and nautical images, evokes the ambiance of a night by the beach, bringing a touch of coastal charm to the city. Whether you’re seated in the plush velvet booths or the inviting bar space, the warmth of the environment invites you to relax and unwind.

Whether you’re enjoying a quiet dinner or a lively gathering, ITMIRO’s ambiance enhances the overall experience, making every visit a memorable one.

The attention to detail is clear, from the thoughtful presentation of dishes to the carefully curated decor. ITMIRO’s branding isn’t just about aesthetics; it’s a testament to the restaurant’s commitment to quality in every aspect, from food to ambiance.

A Menu That Delivers Comfort and Quality

During a recent dinner at ITMIRO, Hubby, my son and I indulged in a variety of dishes that perfectly balanced comfort and sophistication. We started with the Four Cheese Pizza (Php930 for 12 inches), its much-celebrated crowd favorite that didn’t disappoint. The blend of blue cheese, cheddar, mozzarella, and parmesan created a rich, flavorful experience that lived up to its reputation.

Next, we sampled several oyster dishes, each showcasing ITMIRO’s dedication to quality. The Baked Oysters (Php390 for 6 pieces) were a highlight, topped with a creamy homemade sauce that complemented the briny oysters perfectly.

The Oyster Rockefeller (Php580 for 6 pieces) offered a more complex flavor, with butter, parsley, onion, spinach, and parmesan cheese enhancing the natural taste of the oysters.

For Hubby, who’s always game for something new and wanted his oysters with a bit of crunch, the Breaded Japanese Oysters (Php790 for 3 pieces) were a hit. Deep-fried and served with a tangy Sriracha mayo sauce, these oysters were a satisfying and indulgent treat.

We also tried the Salpicao (Php595), featuring tender US beef sautéed in olive oil and topped with garlic, and the Crispy Baby Squid (Php680), served with a flavorful garlic aioli. To round out our meal, we added a simple yet essential side: Garlic Rice (Php90 per cup), which paired well with every dish.

Goto Tendon: Mandaluyong’s new Pinoy comfort food destination

In the fast pace of city life, finding a spot that serves comforting, familiar food can be a real treat. For me and the fam, Goto Tendon on Boni Avenue is exactly that place—a haven for anyone in need of hearty Filipino dishes that remind us of home. This restaurant has quickly become a favorite for those who appreciate the simple pleasure of a well-cooked meal that feels like a warm hug.

A Family Legacy Transformed

The story of Goto Tendon starts with Jenny Peñaloza’s search for something new. After dedicating herself to family life, she wanted to create something meaningful. Along with her husband John, they took Jenny’s beloved goto—a recipe handed down from John’s grandmother, Nena Peñaloza—and turned it into a restaurant. The result is a place that doesn’t just serve food; it serves up a slice of family history and tradition with every bowl.

Convenient Location, Comfortable Atmosphere

This new Goto Tendon branch is conveniently located along Boni Avenue in Mandaluyong City, making it an easy stop whether we’re heading home, to work, or school. It shares a building with Itmiro Oyster Bar & Kitchen, and there’s even a hidden staircase connecting the two (more on this on my next post).

Inside, the restaurant is clean and air-conditioned, with plenty of seating, definitely an upgrade to the neighborhood gotohan. It’s a comfortable spot to enjoy a meal, though parking can be tricky, especially in the evenings when Itmiro is busy.

A Menu That Hits the Spot

The menu at Goto Tendon has something for everyone, and here’s what my family and I keep coming back for:

Beef Tendon Mami (Php288): This egg noodle soup with beef and tendon is a staple for my hubby. It’s comforting and rich, making it a favorite of my husband, especially on chilly days.

Beef Tendon Pares (Php238): This dish features tender braised beef stew with collagen-rich tendon, garlic rice, soup, and a homemade chili sauce. It’s a hearty meal that’s quickly become a go-to for us.

Beef Tendon Pares Noodles (Php288): My son loves this version with dry egg noodles and a side of soup. It’s the same great beef stew and tendon, but with a different twist that keeps it interesting. Of course, he gets an extra order of Garlic Rice (Php45) because carbo-loading is life.

Goto Tendon Boni

Sizzling Burger Steak (Php338): The 100% U.S. beef served on a sizzling plate with garlic rice, egg, and gravy is always a hit. The sizzling effect adds a bit of excitement to each bite.

Sizzling Bulalo (Php498): This dish includes corned beef and bone marrow in gravy, served on a sizzling plate with garlic rice. I like how its flavors are deep and satisfying, and the sizzling presentation makes it stand out.

Bone Marrow (Php158): Grilled and seasoned, this bone marrow can be enjoyed plain or with pares sauce. It’s a rich, savory treat that pairs well with the other dishes.

Sweet Treats to End Your Meal

No visit to Goto Tendon is complete without trying its shaved ice desserts and the fam has certainly tried out the entire roster:

Goto Tendon Boni
Kape Con Niyebe (Php172): Coffee-flavored shaved ice with coffee jelly is a great way to end a meal. It’s sweet but has that coffee kick that’s just right.
Goto Tendon Boni
Maiz Con Niyebe (Php138): This milk-flavored shaved ice with sweetened corn kernels and leche flan is a creamy, satisfying finish to any meal.
Goto Tendon Boni
Ube Cheese Con Niyebe (Php148): The ube-flavored shaved ice with grated cheese and leche flan is unique and delightful.
Goto Tendon Boni
Salted Egg Ube Con Niyebe (Php230): This dessert mixes ube-flavored shaved ice with salted egg cream, bean paste, and pinipig for a complex and tasty treat.
Goto Tendon Boni
Tsokolate Con Niyebe (Php158): Chocolate-flavored shaved ice topped with Oreo bits is a hit with both kids and adults.
