Amici launches a Taste of Italy in its new resto at One Bonifacio High Street, BGC

Amici has long been the home of great-tasting Italian food, ever since the restaurant got its start as a canteen of Don Bosco’s printing press ran by Salesian Italian missionary Father Gianluigi Colombo.

Today, the chain of restaurants that carry its name is recognized as the premier foodie destinations for authentic Italian dining experiences.

It’s therefore hardly surprising that the opening of Amici’s latest branch at One Bonifacio High Street in Bonifacio Global City was met with much excitement. This new outlet boasts of a spacious seating area inside the mall, and soon, a veranda where diners can eat their meal with an awesome view of the buildings surrounding the mall.

Add the introduction of new menu items crafted by Amici’s very own Chef Paolo during the event and you can bet foodies all over the metro will be wanting a taste.

This delightful repast consisted of:

Truffle Mushroom Dip (Php385). A medley of four types of mushrooms (truffle, porcini, shiitake and button) mixed together with caramelized onions in a rich creamy sauce. Served together with crisp pieces of pizza crust, the dip had us reaching for it again and again.

Chef’s Chicken Ceasar Salad (Php295 regular | Php560 grande). Here, Chef Paolo does his own twist on the classic Ceasar Salad by adding parmesan cheese crisps to the chicken, mixed greens and croutons tossed in Amici’s own-recipe Ceasar Salad dressing.

Shrimp Pesto & Pomodoro (Php365). Plump shrimp sauteed in garlic and tomato sauce with linguine and Amici’s house-recipe pesto sauce tossed in.

Salmon & Zucchini Pizza (Php525). Zucchini, flakes of smoked salmon, bacon bits and mozarella top an Alfredo sauce base on this crunchy oven-baked pizza.

Striploin Steak Salpicao (Php625). Tender strips of striploin steak simmered with garlic and mushrooms in Amici’s house salpicao sauce and served with rice pilaf.

Mango Magnifico (Php120/slice). Light chiffon cake in between layers of whipped cream studded with mango bits and cashew brittles, this is one of Amici’s classic desserts which served as a fitting end to our delightful meal.

With the onset of the rainy season, don’t you sometimes feel the need to just snuggle up somewhere with a nice, hot cup of tea?

Well, why not?

For centuries, tea has long been known to give comfort to its drinkers, with stimulating mental alertness, increasing resistance to disease, cleansing and reinvigorating skin, assisting in proper digestion and easing joint and muscle discomfort.

Together with my friends from #WeLoveToEatPH, I discovered that there’s more to tea than meets the eye at The Coffee Bean & Tea Leaf’s recent #DiscoverTea event held at the 26th Street Bistro in Bonifacio Global City.

One of these discoveries is the process of tea cupping, which involves using multiple senses to appreciate and evaluate tea.

Here’s how:

With your sense of sight, visually examine the dry and unfurled tea leaves. Whole leaves with good color indicate tea of good quality.

With your sense of smell, take in the aroma of tea and try to distinguish the unique smell of each variant from the others.

With your sense of taste and touch, take in the flavor and mouthfeel of the brew as you slurp it using a stainless steel spoon.

Many things enter into the equation when it comes to enjoying a perfect cup of tea. Those that are stored in airtight containers and placed in a cool, dry and dark place will be able to keep their potency of flavor much longer. Those made of full and loose tea leaves would provide the finest taste, especially when steeped in freshly boiled water, and in the right proportion (8oz of hot water per 1 tsp of tea: or 12-16oz of hot water per tea bag).

Steeping time also plays an important role in producing your perfect cup. Steep it too briefly and you won’t maximize the tea’s flavor; steep it for too long and you scald the leaves, giving the tea a bitter taste.

Green teas require the shortest steeping time at 3 minutes, while black and oolong teas require a bit longer steeping time at 5 minutes. Herbal and fruit infusion teas require the longest at 7 minutes.

Also, be sure to pour the hot water over the tea, instead of dropping the tea bad into the hot water.

The #DiscoverTea event also served as the launch of CBTL’s new tea flavors which we enjoyed with some of the cafe’s pastry offerings.

Food-and-tea pairing is designed to enhance the flavor of the tea and the pastry by finding similar or complementary elements in both, as in the case of:

African Sunrise x Banana Chocolate Muffin. CBTL’s hand-crafted honeybush with a mild and sweet taste, and aromatic vanilla flavoring brought out the light sweetness of the cafe’s chocolate chip-laden classic banana muffin.

Genmaicha x Spicy Tuna Pandesal. The roasted flavor of from the Sencha tea and rice blend complemented the spicy tuna inside the hot pan de sal.

Apricot Ceylon x Blueberry Cheesecake. Definitely my favorite pairing, the light and fruity Ceylon tea is a great foil to the rich blueberry-topped cheesecake.

Pomegranate Blueberry x White Chocolate Berry Cheesecake. The bright and fresh yet exotic tea brought out the richness of the decadent blueberry-filled white chocolate cheesecake.

After our tea pairing experience, our team went on a new foodie adventure: blending our own tea! We mixed Black Ceylon tea leaves with dried mango bits, pieces of orange peel and rose petals. After steeping in hot water, the resulting drink is fragrant and light, with a slight citrusy flavor. Who knew we could be tea masters for a day, eh?

Food and nature-tripping at Burrow Cafe, Taytay

Nestled into east of Manila is a hidden haven for food and nature lovers. Called Burrow Cafe, it is located in the Antipolo Beehouse, a nature reserve set in a quiet residential subdivision away from the city’s hustle and bustle.

My daughter #ExhibitA and I decided to treat my mom out to Sunday brunch at Burrow Cafe. This mother-daughter-granddaughter outing is something we’ve been wanting to do for a long time but never found the time for until now.

So last Sunday, off we went up Ortigas Avenue Extension towards Antipolo and into Beverly Hills Subdivision where the Beehouse is situated. Upon arriving at the Beehouse gate, we went down 76 steps (good thing I didn’t wear heels!) to a lush green courtyard with another flight of stairs leading to what seemed like an underground bunker.

When we entered the cafe’s premises, however, we were treated to an abundance of light and greenery, thanks to the cafe’s large panel windows which let in a lot of natural light and give diners a relaxing view of the surrounding forest. Artfully laid out wood furniture, potted and hanging plants as well as other bric-a-bracs further accent the cafe’s nature theme while hammocks hanging from the ceiling provide some splashes of color and whimsy to the interiors. Outside, there is a balcony that overlooks a nearby mountain stream.

Though quite tasty, food items are limited and a bit pricey. Given the cafe’s lovely and restful ambiance and warm, friendly service, however, I’d say dining here is well worth the expense and effort.

After all, nothing but the best for my mom and my baby girl.

Padi’s Point and San Miguel Beer Partner for Happy Hour Barkada Treat 2019

For the second straight year, the country’s widest bar chain, Padi’s Point Restaurant and Bar and the largest beer producer of the country—San Miguel Brewery Inc., have partnered for one amazing treat for all “barkadas.”

Happy Hour Barkada Treat have made San Miguel Beer products available at 3 bottles for only P150 in all Padi’s Point branches during their respective Happy Hour schedules this April 1 to May 31, 2019. But as an added treat, all customers who availed this offer during the promo period were given raffle coupons wherein their names plus two of their friends were indicated and will have a chance to win in the grand raffle held on June 7, 2019 at Padi’s Point-Metro East wherein 3 Game Consuls were given away.

For decades now, Padi’s Point has remained the after-hours drinking and gimik place for the barkada. Heritage of flavors at Pamana, Tomas Morato

Pamana in Tagalog means “heritage.” It is a legacy passed down from generation to generation taking with it the hopes and dreams of forebears for their descendants. For many Filipinos, this heritage takes the form of family traditions and stories that provide them with roots and backgrounds.

For third-generation restaurateur Happy Ilagan Ongoauco – Tiu, her heritage rich with heirloom and secret recipes of Filipino dishes is a point of pride. It signifies a hundred years of delicious and authentic Filipino food arising from her family’s passion for cooking and love for family.

She brings this heritage to life with her restaurant Pamana, a Filipino restaurant located in foodie-friendly Tomas Morato area in Quezon City.

On my first day back to work from my overseas vacation, I headed to Pamana’s homey restaurant together with three coworkers for a spot of good ole’ Filipino comfort food for lunch.

My Adobo Rice (Php220). Nearly two decades ago when I started working in the Tomas Morato area, I enjoyed some yummy rice toppings at World Topps then located along Timog Avenue. Well, guess what! World Topps was Happy’s first restaurant and this dish is what made it famous. This rice meal of adobo pork bits, scrambled eggs and freshly cut tomatoes on top of steaming hot rice doused in adobo sauce is already good for three so we just supplemented it with a cup of garlic rice.

Pampanga’s Sizzling Sisig at Aligue (Php320). It seems that any Filipino reataurant meal won’t be complete without sisig. This version had the indulgent addition of aligue (crab fat). Treated during this meal as a viand, it went well with the Adobo Rice.

Crispy Adobong Pusit Calamares (Php325). My coworkers discovered this menu item while I was on vacay. And what a discovery indeed! It combines the sour-savory flavors of adobong pusit and the crispy and chewy texture of calamares. Similar to the sisig, this tasted so good paired with the adobo rice.

Tastes of the Pacific Northwest’s own Single Malt Whiskey at Westland Distillery

We usually associate the strong and astringent whiskeys to Scotland where the traditions of brewing and distilling of this spirit were said to be first established. The name whiskey, in fact, was derived from the Gaelic word uisce.

However, the folks at Westland Distillery are advocating a new category of single malt whiskies: that which is home-grown in the Pacific Northwest. While still honoring the same core ingredients – barley and water, and the same time-tested equipment and processes, Westland Distillery produces outstanding whiskies that are defined by its environs: whiskies that are truly American.

It turns out that the Pacific Northwest’s area and climate are ideally suited to the production of single malt whiskey. For one thing, Washington State covers two of the world’s best barley-growing regions, and water from the Cascade Mountains provide the water.

During the fam’s visit to Washington State, Hubby and I were treated by my bro to a whiskey tasting event at Westland Distillery’s Cantilever Room, where we enjoyed the rustic atmosphere along with the distillery’s signature whiskies.

Before the whiskey tasting, we were given a tour of the production floor where we learned the science and artistry that goes into making a very American single malt whiskey.

Whiskey production starts with barley which form part of local farms’ crop rotation practices, thereby further enriching the soil.  These grains are then malted (soaked in water to allow to germinate to release enzymes then quickly dried through a kiln or peat smoking) to achieve five malt flavors that Westland Distillery mixes together according to their ratios or recipes called grain bills: the Washington Pale Malt, the Munich Malt, the Extra Special Malt, the Pale Chocolate Malt and the Brown Malt.  The Peated Malt factors into the Peated whiskey that the distillery produces.

With these many types of malted barley used in whiskey making, how can the distillery’s product still be considered single malt?  As clarified during our tour, for a whiskey to be considered single malt, it just needs to be made of malted barley produced by a single distillery.

The grains are taken to the mill room for mashing wherein they are combined with water and allowed to ferment to produce wort, which contains sugars that will then be mixed yeast to produce alcohol.  Westland Distillery uses Belgian yeast which adds a floral flavor to the brew.

In the still room, the brew is distilled first in the onion-shaped copper wash still, then in the spirit still to concentrate and isolate the alcohol.

The distillation process also cuts the brew into heads, hearts and tails.  The heads are mostly made up of volatile alcohols which are disposed of as these should not be consumed. The hearts, on the other hand, contain most the rich flavors of what goes into the whiskey, while the tails contain the more bitter and musty portions which are also disposed of.

Distilled alcohol is actually clear: the amber color that we associate with whiskey comes from the charred oak barrels used where the alcohol is allowed to mature for a minimum of three years.

The aged whiskey is then blended with those from other barrels to create flavors and achieve consistency per variant.

After the tour, we proceeded to the tasting area where we were provided with glencairn glasses.  These feature a tapered mouth and are designed specifically to allow the drinker to appreciate the complex flavors and aspects of fine whiskey.

Here, we sampled Westland Distillery’s signature flavors:

American Oak. Made use of the five-barley grain bill together with new American oak casks.  It has a combination of cream and citrus smell and has a fruity and chocolatey taste. This has won the Chairman’s Trophy in the Ultimate Spirits Challenge.

Sherry Wood.  Made use of the five-barley grain bill but, this time, with casks previously used to age sherry wine.  It has a sweet maple-y smell and taste.  It won as the Craft Whiskey of the Year in the SF World Spirits Competition.

Peated.  Peated malts were combined with non-peated five-barley grain bill to produce a whiskey that calls back to older traditions.  It has a nuttier smell and has a smokey flavor.  It was awarded Whiskey of the Year by the American Distilling Institute.

Single Cask Release (Cask No. 2549).  Made with pale malt barley matured in casks previously used for bourbon.  It smells of pear and tea and has a fruitier taste.

The whiskey tasting was a fun learning and foodie experience for me. I’m not much of a drinker but now I can say that I have a greater appreciation for whiskey.  Whiskey tasting tours are offered from Wednesdays to Saturdays at 12 noon and 4pm, depending on availability.  You can schedule your visit using the distillery’s website.

For my family’s second night in the Evergreen State, and knowing that my little boy is a certified pizza monster, my bro decided to just take out some pizzas for dinner.

And his choice for pizzas? Pagliacci Pizza!

The Original (USD13.99 for 11″). Pagliacci’s signature cheese pizza made with whole-milk mozzarella and our seasoned tomato sauce on hand-tossed dough, baked on bricks. This is perfect for my little boy (who’s crazy about all-cheese pizzas).

Extra Pepperoni (USD24.99 for 17″). A blanket of pepperoni covers a layer of mozzarella and Pagliacci’s seasoned tomato sauce.

Parma Primo (USD29.99 for 17″). A layer of prosciutto, mushrooms, goat cheese, mozzarella over olive oil, and finished with tomatoes and basil after done baking. Then flavors of the prosciutto and goat cheese go well together and are further enhanced by the earthy taste of the mushrooms and the fresh flavors of the basil leaves.

An immersive coffee experience at Starbucks Reserve Roastery, Seattle

Seattle, WA is the birthplace of Starbucks. My love affair with this coffee brand is well-known among my nears-and-dears (and well-documented on this blog, too!)

Well, on my second visit to the Evergreen State, this time with my family in tow, I made sure to drop by the mecca for coffee lovers right here in Seattle: the Starbucks Reserve Roastery.

Located just nine blocks from Starbucks’ original store near the Pike Place Market, it is one of the largest Starbucks outlets in the world, occupying 15,000 square feet of space, all dedicated to the company’s pursuit of coffee innovations.

Here, visitors can look forward to a unique and immersive combination of coffee experiences, such as witnessing the on-site brewing of rare Starbucks Reserve coffees, tasting an ever-evolving beverage menu, watching, tasting and learning eight distinct coffee preparation methods, perusing an expansive library of coffee-related tomes, and chatting with a staff of Certified Starbucks Coffee Masters who simply love talking about their craft.

The experience starts in the Main Bar where you can order your cup of choice or allow the Coffee Masters to recommend a perfect handcrafted drink for you, made with the store’s freshly roasted, rare coffee beans.

Here, the kids and I enjoyed 12oz glasses of Cold Brew Malt, a treat from my bro. This drink is a thick malted milkshake made with Starbucks’ cold brew coffee spindle-blended with Mora’s vanilla ice cream and chocolate bitters.

Bro-in-law, on the other hand, a Matcha Teavana Tea Latte, one of the store’s non-coffee drinks.
