Every Sunday is Family Day. Part of my family’s Sunday routine is to have lunch together after attending mass. We usually opt for either old favorites or new restaurants we want to try. For this instance, we opted for Yabu House of Katsu since we already know that we love the food there.

The first thing that struck us was their commitment to authenticity. Yabu prides itself on offering an authentic Japanese katsu experience. One ritual that we particularly enjoyed was preparing the katsu sauce by grinding the toasted sesame seeds in a textured bowl before pouring and mixing in the prepared katsu sauce.

My son, being a cheese-lover, went for the Menchi Katsu Set (P430) made with a mixture of minced beef and pork mixed together with Yabu’s special spices and stuffed with creamy cheese.

Of course, the kids insisted on an order of Mozzarella Katsu Sticks (P320), sticks of mozzarella coated in golden panko tossed with Yabu’s special furikake blend and served with spicy aioli dip.

Meanwhile, my husband wanted to munch on an order of Agedashi Tofu (P265), panko-crusted Japanese tofu topped with shredded bonito flakes and grated radish, and served on a bed of soy-dashi sauce, while waiting for our katsu sets.

Growing up in the 90s, I recall that most of my family’s celebrations such as birthdays, reunions and more were held at DADS. Got my #YabuAtHome, finally!

One aspect of pre-COVID-19 life that I miss the most is dining out.

The excitement as I step into one of my go-to restaurants, the anticipation for my favorite dishes and the joy of biting into familiar flavors and textures… all these are part of the enjoyable experience of dining out.

Some of the dishes I enjoy most when eating out are the katsu sets from Yabu: House of Katsu.

Yabu takes pride in its tokatsu. Thick cuts of premium meat from local farmerd are coated in panko (Japanese bread crumbs) and deep-fried at precisely 165 deg C then allowed to rest. The result: brightly golden katsu with crispy panko coating giving way to juicy and tender meat.

Aside from the freshly-made tonkatsu, each Yabu katsu set consists of refillable steamed rice, miso soup, shredded cabbage and slices of seasonal fruits.

The fam and I enjoy dining at Yabu for the delicious katsu and the unli rice and shredded cabbage. Being able to eat our fill at this resto makes for great value for money.

However. the pandemic made itself known to the world in quite a big way, and with all the restrictions resulting from the quarantine, dining out will never be the same.

There was a time when I despaired of ever getting to enjoy the katsu sets I craved for.

For years now, my family has been getting our Japanese food craving satisfied by Teriyaki Boy.

This local chain under the Max’s Group occupies the space between fast-food and high-end Japanese restaurants by offering the fam’s Japanese food faves at reasonable prices.

This tender and juicy piece of imported meat, grilled to our preference (medium to medium-well) and served with rice, French beans, cherry tomatoes and herb butter on a sizzling plate, ready for the satisfying sight, sound and smell of flavorful gravy being poured over it.

While strolling around and running errands in Robinsons Galleria one Saturday, the fam decided to have lunch at Yabu: House of Katsu. While waiting for our meal, we munched on some tasty appetizers.

Mozzarella Katsu Sticks (Php285). Large sticks of crunchy, deep-fried panko-coated mozzarella cheese tossed in Yabu’s special blend of Furikake and served with a spicy aioli dip.

What we actually came here for are Yabu’s Katsu Sets. Yabu’s katsus are made with generous cuts (nothing less than 0.75in) of premium pork sourced from local farmers and delivered straight to Yabu’s kitchens. Each cut is freshly made upon order, coated with fresh panko and cooked at precisely 165 deg C to achieve a bright and golden appearance and a tender and juicy texture.

Each katsu set is served with refillable Yabu staples which include white rice, miso soup, shredded cabbage and fruits.

Prior to our meal, we took part in the Yabu ritual of preparing our katsu dips. This consists of grinding toasted sesame seeds in a small bowl, pouring the salty-sweet and slightly tart katsu sauce into the bowl, and mixing both until we get our desired consistency. For me, the katsu dip is as essential to the katsu experience as the pork cutlets themselves. It goes so well with the katsus and adds another dimension of flavor to the dish.

For today’s foodie adventure, we decided to give the newly opened Japanese restaurant along Sgt. Esguerra Street a try!

Located within walking distance from our office is Fumizen which specializes in premium katsu. It is a local franchisee of a long-established Japanese restaurant which was founded over 40 years ago and patronized by Japanese officials and celebrities.

It has a cozy atmosphere and a minimalist aesthetic with polished wood and gray upholsteried furniture set against clean white walls sparsely decorated with silhouettes of bamboo.

Katsu refers to “cutlet” in Japanese. It is usually a piece of meat coated in panko breadcrumbs and deep-fried to achieve a bright golden color and a crispy outer layer which gives way to tender. juicy and flavorful meat inside.

At Fumizen, diners can enjoy Katsu Sets which consist of a katsu variant plus unlimited rice, miso soup, shredded cabbage and fruit slices. The katsus may be enjoyed by dipping the pieces in Fumizen’s secret katsu sauce, rock salt or the resto’s signature truffle salt.

The katsus are well-cooked with the panko-breading adhering well and providing a satisfyingly crunchy texture to the meat. I found dipping the katsu in truffle salt winderfully heightens the flavor.

What could use a bit of work is the rice which could be a little stickier to serve as a foil to the katsu.

The wait staff is polite and accommodating but could use some more training on product knowledge.

Still, with the quality and afforadability of Fumizen’s katsu sets, it sure looks like my officemates and I found a new favorite Japanese resto in our area!

It’s been some time since I last had a taste of premium tonkatsu. I’ve been craving those flavorful pork cutlets, breaded with panko, deep-fried to a beautiful golden brown and accompanief by fluffy Japanese rice and its own katsu sauce.

But first, how about some trivia about one of my favorite dishes? For example, did you know that…

  • Katsu is a shortened form of katsuretsu which means “cutlet?”
  • The dish was introduced in Japan in the 19th century during the Meiji period when the country opened its doors to the West?
  • At first, beef was used for katsu bit was later eclipsed by pork as the meat of choice by the 1900s, hence the rise of the term tonkatsu with ton referring to pork

Well, what comprises tonkatsu anyway?

You will know that you’re enjoying good quality and authentic tonkatsu when these are present:

  • Thick cuts of meat. Expect generous cuts of meat of at least 0.75 inches, giving you a viand that’s flavorful and filling.
  • Premium pork. Only the finest pork from local farmers delivered fresh to the kitchen should be used to ensure meat that’s tender and juicy.
  • Fresh panko. The panko (Japanese breadcrumbs) that coat the katsu should be freshly made, resulting in long, light and crispy flakes that adhere to the meat and gives a satisfying crunch to the bite.
  • Heat. The katsu should be cooked at precisely 165 degrees C and allowed to rest properly to help it retain its juiciness and tenderness.
  • Bright and golden. The resultigg katsu should be served fresh with a bright, golden color and crisp coating.

With these to look forward to, I went to the Yabu House of Katsu branch at Ayala Malls Feliz for lunch for my return to katsu. My solo food adventure was a Hire (Pork Tenderloin) Set (Php375 for 80g) which consisted of a thick and juicy pork cutlet with no fat, plus refillable Yabu staples which include steamed white rice, miso soup, shredded cabbage and fruits.

Mitsuyado Ramen Shokudo Gives You More Delicious Options at Budget-Friendly Prices

Just when you thought you’ve experienced all there is to it when it comes to ramen dining, in comes another concept from the same company that gave you the Tsukemen experience.

Infinity Foods Alliance, the firm behind Mitsuyado Sei-men: The House of Tsukemen, recently opened a cafeteria-style ramen shop at the Japan Town of Top of the Glo in Glorietta 2 that is reminiscent of the noodle houses in Japan.

Mitsuyado Seimen is a concept that originated from Tokyo, Japan. It specializes in Tsukemen (dipping noodle). This is what it has been known for in the Philippines for the past six to seven years. It is known for making good quality thick noodles for Tsukemen. For Mitsuyado Ramen Shokudo, meanwhile, uses good quality thin noodles.

“Mitsuyado Ramen Shokudo is a ramen house where you can choose your own ramen and pair it with your preferred topping,” explained Judy Kay C. Ang, representative of Infinity Food Alliance.

Mitsuyado Ramen Shokudo was born because the company wanted to offer a fast-paced restaurant to satisfy the ramen cravings of Filipinos. In the Philippines, ramen has been priced on the average of P400-P500 per bowl. Through Mitsuyado Ramen Shokudo, it wants to bring ramen appreciation to a price level that is more affordable, which is about only P180 per bowl.

Their ramen offerings include the Hakata Ramen, a pork-based broth that originated from the Hakata District of Fukuoka in Kyushu in southern Japan. They also have the white original Hakata Tonkotsu Ramen, Red Spicy Ramen (which makes use of the Japanese spice, karashi), Black Garlic, and Green Matcha.

To add variety to the ramen they ordered, customers are encouraged to customize it by selecting from various favorite Japanese toppings. Choices include the Charsiu, Sukiyaki, Ajitama, and Boneless Pork Chop, among others. Ang said that there are currently 10 to 12 toppings, and this number can increase in the coming months.

“We want to offer something different to the popular ramen, and we want it to be very affordable. At Mitsuyado Ramen Shokudo, customers can enjoy good quality noodles at very budget-friendly prices,” said the company’s Marketing and Customer Care Specialist April Faith Alquiroz.

Now, if you want to enjoy your ramen with other popular Japanese food on the side, you can do, too! For Filipinos who love rice, meanwhile, there are donburi options available. There are the Pork Cutlet Rice Bowl Don, Ebi Tempura Don, Chicken Karaage Don, Boneless Porkchop Don, and Gyoza to choose from.

Ang said that after their Glorietta ramen shop, they will be opening another Mitsuyado Ramen Shokudo in Vertis North. In the coming months, they will also be unveiling a CoCo ICHIBANYA Curry House in Top of the Glo before the end of the year.

Infinity Foods Alliance is among the many companies focusing on Japanese concept restaurants by entrepreneur Hubert Young, who has been credited for growing the UCC Coffee chain in the Philippines. He is also set to open the biggest Japanese fast food burger chain Mos Burger in the last quarter of the year.
