Considering how much my fam loves Koomi’s yogurt drinks, we have been eagerly awaiting the opening of its newest branch at SM City East Ortigas ever since we found out about it.

Koomi is an Australia-based chain which specializes in combinations of natural probiotic drinking yogurt with various fresh and wholesome ingredients to produce yummy and icy drinks that brings its signature #GuiltlessGoodness to yogurt drink lovers in the metro.

When ordering your Koomi, specify whether you want an Aussie blend (more tangy) or a Filipino blend (more milky) yogurt base. You can also choose the level of sweetness you want.

While we didn’t have the chance to visit the store, getting our drinks delivered to us was easy as can be.

#QuarantineCookbook: Homemade Avocado Ice Cream Cake

Relief from this summer’s oppressive heat and humidity is few and far between.

It makes me want to cool down with some frozen treat. How about you?

Well, since I recently learned how to make homemade ice cream, I set about learning how to add a twist to it: make it into a cake!

And of course, I just had to try it with my favorite fruit: the avocado!

Homemade Ice Cream Cake

This fruit has been having quite a resurgence lately, appearing in a variety of trendy and previously unheard-of dishes from toasts to pastas. However, the avocado’s real siren call to me is as a dessert. Its rich and creamy texture, as well as its earthy flavor make the avocado absolutely sensational when sweetened, making it a great showcase ingredients for desserts such as this homemade avocado ice cream cake.

It turned out to be so easy!

Ingredients:

For the crust:

2 cups crushed Christia toasted bread (can be replaced by an equal amount of crushed Graham crackers)
1 stick of softened butter
3 tbsp white sugar

For the ice cream:

1 cup avocado puree (made by pureeing the flesh of two ripe avocados in a blender)
1 300ml can of condensed milk
2 cups heavy whipping cream

Procedure:

In a bowl, combine the crushed Christia toasted bread, butter and sugar. Press the crumb mixture onto the bottom of two 6″ x 2″ cake tins then set aside.

Homemade Ice Cream Cake

In another bowl, mix together the avocado puree, the condensed milk and heavy cream at low speed until the ingredients are well-combined and the mixture begins to thicken.

Increase the mixer speed to medium and continue mixing until the mixture forms stiff peaks.

Transfer the mixture into the prepared cake tins, gently pressing the mixture into the containers and smoothing out the top using a spatula.

Freeze for at least six hours or overnight.

What you get is a wonderful creamy blend of avocado sweetness and crumbly buttery crust with each spoonful. My kids (and I!) absolutely love it!

PS: Truth be told, the recipe originally called for Graham crackers but after scouring through three supermarkets looking for this out-of-stock item, I decided to use Christia toasted bread as a substitute. It had a buttery flavor and a more crumbly texture that went well with the ice cream. Still, if you want a more conventional crust for your ice cream cake, you may opt to stick to the crushed Graham crackers.

Aside from its homecooked sugar syrup, what sets Jack’s Lemonade apart from other lemonade iterations is the use of plum salt or kiamoy. It’s a salty dried plum in powdered form which adds another dimension of taste to the lemonade drinks. It’s readily available at the counter and can be sprinkled on any Jack’s Lemonade drink for free.

Recently, I attended another Jack’s Fresh Lemonade foodie meetup, this time at Food Choices in Ayala Malls Feliz.

Basil Rich Tamarind (Php95 for regular | Php115 for large or hot). This lemonade incorporates a healthy blend of fresh tamarind puree and basil seeds.

Lemon Cheesecake (Php95 for regular | Php115 for large or hot). If you ever wondered if lemonade can be turned into a dessert, well this drink is for you! This drink combines lemonade with powdered milk, condensed milk and grated cheddar cheese and a generous sprinkling of plum salt.

Just when we Easterners thought gelato treats are way above our budget or inaccessible to us, a Fiorgelato scooping station sets up shop right in our turf.

Gelato is a type of frozen dessert that originated in Italy. Made with a base of milk, gelato uses a lot less cream than ice cream, resulting in a denser and creamier dessert.

Fiorgelato produces several gelato flavors that make use of the finest ingredients such as chocolates, fresh fruits and imported Italian flavorings.

Together with my fellow foodies from #WeLoveToEatPH and #SaanSaPH, I visited the newly opened Fiorgelato scooping station at Sta. Lucia East Grand Mall.

The store stocks gelato variants that include: pistachio, pragola (strawberry), salted caramel, choco nut fudge, biscotti (cookies ‘n cream), ube (yam), menta (mint) and fior de panna (vanilla).

These flavors are mixed and matched, topped with goodies and made into yummy gelato-based treats, which, thanks to an ongoing rainy season promo, are currently available at discounted rates.

Aqua S now serves up Australia’s premium soft-serve ice cream at SM North EDSA

Summer’s over so one would think that our predilection for ice cream would wane, right?

Wrong!

Not when Aqua S, Australia’s premium soft-serve ice cream, has arrived at our shores and opened its first Philippine store at SM North EDSA.

What makes this ice cream so special? Well, as my fellow foodies from #WeLoveToEatPH and #SaanSaPH and I found out, aside from the sweet-salty tastiness of Aqua S’ Signature Sea Salt flavor, it has also developed serving up its soft serve as an artform.

Here’s how:

First, you choose how you want to enjoy your ice cream.

You can go for one with a black waffle cone (Php160) or one in an Aqua S cup (Php130 for 5oz | Php160 for 8oz).

Second, pick your flavor.

Of course, you’ve got to try the Signature Sea Salt variant! You would know it by its bright, ethereal aqua color, reminiscent of the calm, tropical sea, and its sea salt flavor, a delicate balance between sweet and salty that tickles your tongue and has you reaching for more.

Every fifteen days, Aqua S launches new exciting flavors. Available from July 1 to 15 are the fruity Strawberry Milkshake and earthy-yet-sweet Matcha Frappe. You can enjoy these variants by themselves or twisted with the Signature Sea Salt (which I highly recommend!).

Finally, make your artwork.

Choose from a variety of toppings and add-ons at Php30 each that will not only make your ice cream a treat for your tastebuds, but a feast for your ice as well. For example:

  • Fairy Floss is a bed of delicate cotton candy that will make your ice cream seem to float on a cloud.
  • Sweet Popcorn adds more of that salty-sweet dynamic to your dessert.
  • Popping Candy adds some color and zing to your ice cream.
  • Grilled Marshmallow on a Peppero stick adds more of that gooey sweetness to an already indulgent dessert.

So if you’re looking for a new kind of sweetness, drop by Aqua S and check out its yummy and pretty ice cream variants. In fact, come back at least every two weeks to taste its new flavors.

Sweetly decadent dipped strawberries from Fruiquet

I came home to a sweet birthday surprise: a box of 12 Dipped Strawberries Supreme from Fruiquet, sent by the boss! (Note: what a way to make one feel valued, hint hint hint to other bosses out there!)

Each strawberry was huge, three times bigger than the ones we usually find in local groceries (I heard Fruiquet sources these from the US), and dipped in smooth semi-sweet or white chocolate with decorative swirls that give the berries a festive and appetizing presentation. Each bite produces a burst of sweetness in my mouth, luscious and fruity from the strawberry and rich and decadent from the chocolate.

And since great things become even better when enjoyed with loved ones, I shared the box of succulent goodies with my family during my birthday get-together.

Dipped strawberries are just a sampling of Fruiquet’s innovative fruit gift offerings. Try to place your order a day or two in advance to give the store ample time to prepare the arrangement.

If you are the lucky one who received a fruit arrangement, it’s best to consume it within a day since, as you know, fruits are best when fresh.

Bingsu treat at Jang Da Bang Cafe

Despite the spate of relatively balmy weather these last few days, there’s no denying that summer is already here.

And with the hot summer days, icy snacks like bingsu are a godsend.

I discovered Jang Da Bang Cafe during one of my Korean Food adventures at my favorite Korean resto, Jang Ga Nae, with my daughter – slash – partner-in-crime. After indulging ourselves in our favorite Korean dishes, some of which were quite spicy, we decided to try out the cafe right next door for dessert.We were happy to discover that Jang Da Bang has the same owner as Jang Ga Nae (as if the similarity in their names was not a dead giveaway, duh!). In fact, in our subsequent visits, the family developed the habit of ordering our preferred bingsu dessert at Jang Ga Nae (included in our bill), then hopping over to Jang Da Bang where our freshly made bingsu will be waiting for us.

While Jang Ga Nae’s interiors have the quintessential Korean grill resto look and feel, Jang Da Bang has a brighter and more airy ambiance. Floor-to-ceiling windows let in a lot of natural light that brings out the pops of color in the displayed artwork and plants. It has a more relaxed atmosphere compared to its sister-store, making it an ideal place for hanging out.

We have sampled its two fruity bingsu offerings: mango and strawberry. Both have finely shaved ice flavored with condensed milk and accompanied by cornflakes for texture and red bean paste for added sweetness. A regular-sized order of either is good for sharing among three: myself and my two kids who apparently inherited their “sweet tooth” from me.

Our preference is the mango bingsu (Php199 for regular). Aside from cubes of sweet ripe mango, it also has bits of peaches, pears, nata de coco and the occasional cherry from – standard can of fruit cocktail, and is topped with vanilla ice cream.

The strawberry bingsu (Php205 for regular) on the other hand, suffers in comparison to the other variant only because the tartness of the strawberry bits is not adequately countered by the sweetness of the strawberry ice cream topping.

Going here for dessert after our Korean lunch has become a weekly family habit which will likely continue on for quite some time.
