Pampanga’s culinary heritage is heavily influenced by Spanish cuisine (by way of the Spanish friars and sailors who introduced their way of cooking to the locals during the Spanish occupation), while also sharing characteristics with Malay and Mexican cuisines. Kapampangan cooks also incorporated local produce into the resulting dishes, and pioneered in methods of pre-cooking (“sangkutsa”) and food preservation, earning for their region the moniker “culinary capital of Luzon.”

Suam na Mais. Also known as sinabawang mais, this is a healthy and hearty soup made from white and yellow corn kernels.

Pork Sisig. The famous Kapampangan dish made with pig’s face (“maskara”), belly and chicken liver, seasoned with calamansi, onions and local chilis. Traditionally, this dish does not include the mayonnaise and pork cracklings (“chicharon”) that figure prominently in the version present in many Metro Manila restaurants.

Bringhe. Also known as biringhi, it is the local version of the Valencia paella, but uses local glutinous rice (“malagkit”) cooked in coconut milk (“gata”) and turmeric which gives the dish its distinct flavor and color. Giving more heft to the dish are the bits of chicken , chorizo and vegetables that are cooked along with the rice.

Palitaw. Popular local rice cake dessert made with glutinous rice that was washed, soaked and ground then shaped into flat discs and cooked in boiling water. The dish gets its name from the way that the palitaw floats to the surface to indicate that it’s done. It is then topped with grated mature coconut (“niyog”) and served with toasted sesame seeds, muscovado and washed sugar.

Leche Flan. The classic Filipino dessert made with fresh egg yolks, milk and topped with chocolate flakes.

Considering that Indian cuisine has always been cited as one of the most delicious in the world, it is a wonder that it is not listed among my favorites.

I would probably blame it on a particularly spicy curry dish which was served to me when I was young, which then turned me off the entire culinary tradition for quite some time.

Here, we enjoyed a flavorful lunch which consisted of:

Vegetable Kadai (Php355). Delicately spiced North Indian dish made of assorted vegetables cooked in a red gravy using the Indian equivalent of the wok, called the kadai, from which the dish gets its name.

Butter Naan (Php95). A butter-infused yeast-leavened white flour bread baked in a clay oven called tandoor.

Chef’s Special – Mutton Dry (Php395). Mutton sauteed in various Indian spices and served dry with a special desi gravy on the side. I paired this with the butter naan by wrapping mutton morsels in pieces I tore off the naan.

Chicken Biryani (Php395). Delicious Indian rice dish made with basmati rice layered with chicken pieces and spices then steamed together to produce an aromatic and flavorful viand with a subtle heat.

Since we were able to request the kitchen to set the spiciness of the dishes to very mild, we were able to enjoy their exotic flavors and the slight tickling sensation of heat in palates.

Now, I wouldn’t mind trying out more of Indian cuisine in my future foodie adventures.

I realized that I’ve been working quite hard for the past year.

Despite the convenience of working from home, I’ve been attending lots of meetings, preparing reports, overseeing projects and so on.

Wildflour has been a popular brunch and bistro cafe since 2012, known for its creative menu that incorporates influences from the world’s best cuisines and makes use of ingredients sourced the best organic and local markets.

On a Saturday after a particularly busy workweek for me (and during my daughter #ExhibitA’s lunchbreak from her work which, as luck would have it, sometimes requires her to work on weekends, we decided to have our midday repast at the Wildflour Cafe branch in Uptown, BGC.

During our lunch break escapade, #ExhibitA and I indulged ourselves with Wildflour’s continental dishes such as:

Tender, chunk of beef slowly stewed in red wine sauce with mushrooms and served on a bed of pureed pumpkin.

Teishoku Sets at Tendon Kohaku, Uptown Mall

Food destinations abound in Bonifacio Global City, giving foodies that frequent the area with an exciting array of options for gastronomic adventures.

Uptown Mall, for example, is the site of one such establishment: Tendon Kohaku.

A member of the Mugen Group which also manages other Japanese restaurant brands such as UCC Cafe, Mitsuyado Seimen, MOS Burger and Coco Ichibanya, Tendon Kohaku specializes in tendon, a wordplay on tempura (lightly battered and deep-fried meat, seafood or vegetables) and donburi (“rice bowl”).

Here, Japanese food lovers can look forward to an elevated tempura experience, made possible by four elements:

  • Fresh Ingredients. Only the freshest ingredients, chosen with professional care according to exacting standards, are used in Tendon Kohaku’s tempura dishes.
  • Tempura Batter. Tendon Kohaku’s tempura better is using premium-grade flour and employing traditional tempura techniques to produce a coating that is light, crispy and flavorful.
  • Cooking Technology. The restaurant uses a high blend of sesame and cooking oil applied with a special filtration system that keeps it clean and light for cooking.
  • Secret Sauce. Tendon Kohaku’s two signature sauces are made in-house using a special blend of spices to create a distinctively sweet-savory flavor. The Sweet sauce is crafted to balance out the saltiness of the tempura while the Spicy sauce does the same with an additional spicy kick.

To give my daughter a change of scene away from her workplace nearby, I decided to treat her to lunch at Tendon Kohaku.

We opted to get teishoku – Japanese set meals that already include rice, tuna sashimi, tamago rolls and potato salad – quite a complete and nourishing meal that combines interesting flavors and textures.

My order was the Tempura Teishoku (Php590) which consist of various tempura such as Chicken Breast, Wild Tiger Prawns, Squid, Crabstick, Green Beans, Shiitake, Young Corn and Pumpkin accompanied by tempura sauce.

My daughter, on the other hand, opted for the Tonkatsu Teishoku (Php650), which consist of three slices of panko-breaded and deep-fried pork cutlets served with katsu sauce.

With these teishoku, my daughter and I were able to enjoy a filling meal during her lunch break.

We just can’t seem to resist the sight, sound, feel and flavor of juicy, freshly grilled meat, especially if it comes in the form of hefty burgers.

There’s little wonder then that 8 Cuts Burger Blends remains as one of our go-to burger places.

The store got its name from the eight types of beef cuts which are blended to produce varied but perfectly flavorful and juicy burger patties that make up the different burger options that the store carries.

Each beef burger patty is at least a quarter pound, topped with cheese, lettuce, tomato and onions, then drizzled with the corresponding sauces and sandwiched between fluffy buns.

Aside from burgers, the restaurant also offers appetizers, sides, desserts and drinks to complete a burger meal.

Before a family movie date as SM Cinema, the fam stopped over for dinner at 8 Cuts Burger Blends in Mega Fashion Hall where we enjoyed:

Golden Cheddar Mozza Nuggets (Php220 solo | Php395 sharing). Large pieces of gooey mozzarella and cheddar encased in crunchy breading. Really, how could anyone go wrong with this much cheese?

Bucket of Onion Rings (Php235). Onion rings battered, deep-fried and seasoned until crispy and flavorful. Being such big fans of onion rings, we consider this bucket quite a steal!

Bleu 2.0 (Php325 for 1/4lb | Php390 for 1/3lb). House-blend patty drizzled with Bleu Cheese Sauce and topped with Bleu Cheese crumble, caramelized onions, peppered onion tanglers and crisp green lettuce. This continental twist to the burger is the one that appealed to my daughter.

Four Cheese 2.0 (Php325 for 1/4lb | Php390 for 1/3lb). Burger patty topped with parmesan-crusted mozzarella, sharp yellow cheddar, Monterey Jack, Garlic Aioli, Fried Basil, and Sauce No. 3. Again, I say: how could anyone go wrong with this much cheese?

Q-Daddy (Php345 for 1/4lb | Php415 for 1/3lb). Grilled quarter-pounder patty on lettuce, tomato and onions, topped with peppered onion tanglers, sharp yellow cheddar, smoked bacon, jalapeno ranch, sweet BBQ sauce and Sauce No. 3. This dad-sized burger really suits my Hubby.

Sweet take-home from Randy’s Donuts, Robinsons Magnolia

When the news hit that the iconic Los Angeles-based donut shop will be coming to Philippine shores, it set the metro’s foodies all abuzz.

This donut shop, of course, is Randy’s Donuts.

Foodies who are also well-versed in the Marvel Cinematic Universe will also recognize its distinctive giant rooftop donut signage as the site where Iron Man was having his breakdown before his conversation with Nick Fury and Black Widow.

The opening of its first and second Philippine branches in BGC’s Uptown Parade and Pasay’s S Maison respectively were met with long lines of enthusiastic donut aficionados.

There is little wonder then, that its third branch in Robinsons Magnolia was also greeted with the same excitement. After all, donut lovers will always appreciate more convenient ways to get their sweet fix.

It’s that time of the year when celebrations abound, not just among families, but also among coworkers.

After nearly three years of Zoom parties, officemates can now converge in a single location to party, have fun while enjoying each other’s company!

Those are exactly what my teammates and I did for our department’s Christmas Party held at ATOM Bar + KTV in Tomas Morato, Quezon City.

When our boss tasked our team’s millennial newbies to find a place suitable for our varied personalities, interests and ages – considering there are some Gen X’ers in the group (me included) plus an almost-Boomer division head – the newbies more than rose to the occasion and organized our group’s holiday shindig at ATOM Bar + KTV.

This establishment is a combination of a bar, a family KTV, a comedy bar, a restaurant and a party venue, conveniently located near our pre-pandemic workplace, so most of us are familiar with the area.

Our group of eleven plus a few guests were comfortably accommodated at the VIP Room 6 situated away from the main stage and overlooking Timog Circle.

Luckily, the room also overlooks the parking area in front of its building so I can periodically check on my car parked outside. My other officemates unfortunately had to contend with the building’s basement parking which I heard was a bit too steep for my liking.

The room was furnished with adequate seating areas for our group, as well as two tables to hold the food or facilitate our games that require surfaces. It also had a seating area on top of the loft, a setup similar to the one employed at Cafe I’m Here right next door to ATOM Bar + KTV.

Apparently, two things that united this disparate generations of office workers are the love of song and the love of food. In between bouts of belting out our favorite tunes and competing for prizes, my officemates and I feasted on ATOM Bar + KTV’s menu items such as:
