Yummy homemade apple pie for the apple of your eye

Literary goddess Jane Austen was said to have uttered, “Good apple pies are a considerable part of our domestic happiness.”

I certainly cannot refute the truth behind Ms. Austen’s words.

Apple pies – good ones! – do bring about feelings of happiness and contentment.

This much-loved dessert actually originated in England, influenced by culinary traditions from France, the Netherlands and the Ottoman Empire from as early as the 1390s. It made its way to the New World thanks to the European settlers. It grew in popularity and was eventually included in America’s first cookbook, American Cookery, by Amelia Simmons in 1796.

Over the years, it has become ingrained into American culture, hence the saying “as American as apple pie.”

It has also made its way to this country, where dessert lovers can now enjoy it in the comforts of their own home by ordering from enterprising home bakers.

One such entrepreneur is Mark David Antonio, who started baking apple pies at the start of this year to practice baking and earn a bit of money.

As apple pie is his favorite dessert, he infused it with his favorite elements: a buttery and flaky crust, a sweetly-spiced apple filling and a crumbly streusel topping. Together, these made for an apple pie perfect for any occasion: a show-stopping contribution to a potluck, a delightful gift to a sweet tooth, or a satisfying cap to a wonderful meal.

It’s best served warm from the oven. You will also be treated to the wonderful apple pie aroma wafting to your nostrils as the pie re-heats in the oven, giving you a heady sense anticipation.

You may or may not choose to top it with a dollop of vanilla ice cream to have it ala mode (I didn’t because I couldn’t wait to bite into my slice).

Apple Pie (Mark David Antonio)

It’s also quite affordable at just Php550, so no need to think twice in treating yourself and the apple of your eye to this decadent delight.

Home-baked goodies worth the calories… Baked by Rina

Most of my friends already know my mantra when it comes to food: in Tagalog, it goes – “nasasayang lang ang calories pag hindi ka nasarapan.”

The reasoning behind this is that if I have to spend an extra thirty minutes to an hour on the treadmill just to burn off those calories I consumed anyway, the food better be worth it. (Truth be told: I haven’t been on the treadmill as often as I should but the principle still applies.)

Baked by Rina

During a recent Zoom party with former officemates, I won a box of empanadas from online bakeshop Baked by Rina.

Rina is one of my former bosses. Beneath the fierce, tough love and go-getter exterior she displayed in the workplace, my teammates and I all knew she’s a softie at heart.

That softer side comes to the surface when she brings to the office some items she baked for us to share.

Fast forward a few years and Rina has since moved forward to more creative pursuits: among them are the crafting of preserved flower arrangements for Stories & Blossoms and the creation of goodies baked with love for Baked by Rina.

This venture grew out of the ever-increasing demand for Rina’s baked treats, first within her circle of friends, then on to their friends until she decided to share her creations to a wider network of foodies through her online store. Her offerings include the classic desserts often requested by her family and friends during special occasions or when they have a particular craving.

Dutch Apple Pie (Php1,400). This is my absolute favorite kind of apple pie: a sweetly spiced apple filling on top of a flaky crust and topped with a slightly crunchy and buttery streusel. It’s great on its own but it’s best enjoyed hot and topped with vanilla ice cream.

McDo-snackin’ with the fam

A few days ago, I received a very welcome piece of news: McDonalds Shakes are back and they’re here to stay!

I didn’t realize how much I’ve missed this childhood treat.

That got me thinking: I have been working hard lately, putting in a lot of hours in telecons and drafting presentations. Hubby, too, has been pretty busy with his job, while the kiddos have been dealing with their adjustments to distance learning. Hmm… don’t we all deserve a reward?

So I took out my phone and a few taps later, my treats for the fam were on their merry way to our doorstep.

McDonald’s, Santolan

A little taste of our favorite fast food every now and then can’t hurt, right?

Check them out:

Big Mac Meal (Php207 with medium Coke and medium fries). Oh, yes… the 🎶 two all-beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame-seed bun.🎶 For those who are below forty years of age, one of McDonald’s early advertising campaigns in the country was hinged on listing the ingredients of the Big Mac in a TVC that had a whole lot of airtime. There’s no surprise, then, that many of my generation know this list by heart, and that some, like my Hubby, would consider it his go-to McDo order, inseparable from the fries and Coke.

Cheeseburger (Php62). For those of us – like me and my little boy – who can’t handle the size and the sheer commitment of tummy space that a Big Mac requires, this burger made with ground beef topped with cheese, onions, pickle slice, ketchup and mustard in a toasted bun will have to do.

McNuggets (Php123). Six pieces of battered and deep fried chicken chunks that my daughter just can’t resist.

Apple Pie (Php37). Apple pieces stewed cinnamon encased in a flaky crust then deep-fried. (Because there’s always room for dessert!)

McDo Shake (Php94 for medium). Ah, the catalyst for this snackin’ adventure. McDonald’s creamy soft-serve ice cream flavored with your choice between chocolate and strawberry syrup. My childhood treat is back and that is goooooood!

After the fam made short work of these fast food items, we were ready to tackle our work again.

So every once in a while, it’s good to give in to your fast food cravings.

A delicious taste of home with Tia Carmen’s Apple Crumble

Home is where the heart is, so they say.

Well, given the restrictions on mobility due to the community quarantine, many of us found ourselves stuck at home, though our hearts may be somewhere else.

If you’re yearning to be back in the hustle and bustle of the metro, or to roam free amidst wide open spaces, I’m sorry to say it but you may have long to wait.

In the meantime, why not take comfort in the haven of home by relishing the sweet delights you can enjoy there, with the people closest to you?

Tia Carmen Fresh Pastries

That’s the idea that the folks behind the new online store Tia Carmen Fresh Pastries wants to push. The enterprise is named after Carmen Escriva (sister of Saint Josemaria Escriva de Baleguer) who supported her brother’s ministry and championed a love for home.

Tia Carmen Fresh Pastries

Launched only last July 14, Tia Carmen produces homemade baked pies and crumbles that bring back happy memories of childhood and sharing good food with loved ones.

Its Apple Crumble (Php550), for example, is a masterpiece flavors and textures. From its buttery, slightly crunchy and crumbly topping that gives way to soft and sweetly-spiced apple filling, it is the quintessential comfort food, that can satisfy the sweet cravings of four to six people.

Tia Carmen Fresh Pastries

Tia Carmen Fresh Pastries

Did you know that the crumble originated in Great Britain during World War II? Because of the food rationing instituted by the government, the ingredients needed to make pie crusts were in short supply. Some enterprising bakers used what flour, fat and sugar they had into making a crumble topping and a new dish came to be.

Tia Carmen Fresh Pastries

The apple crumble is best enjoyed warm, with the aroma of apple, cinnamon and butter wafting to your nose. Add a generous dollop of vanilla ice cream to it and you’ve got an irresistible treat!

(Note: I’ve read in several sources that Americans sometimes enjoy apple pie with sharp cheddar. Curious if the same can be applied to apple crumble, but lacking authentic cheddar in my pantry at the moment, I substituted a few slices of processed cheese on a slice of apple crumble. The result? An interesting interplay between sweet and salty that I won’t mind exploring further.)

If your constitution – or refrigerator – can’t handle a whole pie, or you just want an intimate dessert for two – or just one! – get an Apple Crumble Cup (Php200) instead.

Go ahead and get yourself a taste of Tia Carmen’s Apple Crumble so you can also get a taste of the warm comfort of home.

Tia Carmen Fresh Pastries

Tia Carmen’s Fresh Pastries also offers Banana Crumble (Php450 for whole | Php180 for cup) and Apple Pie (Php500).

Its ovens are baking every Monday, Wednesday and Friday, with pies for delivery on the same day to ensure freshness.
