  • Option 2: Partially submerge the container in hot water for ten minutes until the tofu is warm. Leave at least one inch from the top to avoid getting water on the tofu.

Ingredients:

FOR THE COOKIE DOUGH

  • 3 cups all-purpose flour, plus more for surface
  • 1 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 tbsp. milk

FOR THE BUTTERCREAM FROSTING

  • 1 cup (2 sticks) butter, softened
  • 5 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 tsp. pure almond extract
  • 1/4 tsp. kosher salt
  • Food coloring

Directions:

  1. In a large bowl, whisk together flour, baking powder, and salt. Set the mixture aside after.
  2. In another large bowl, beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined, then add flour mixture gradually until totally combined.
  3. Shape into a disk and wrap in plastic. Refrigerate for an hour.
  4. When ready to roll, preheat the oven to 350º and line two baking sheets with parchment paper. Lightly flour a clean work surface and roll out the dough until 1/8” thick. 
  5. Cut out shapes and transfer to prepared baking sheets. You can use cookie cutters for fun shapes. You can also make your own if you’re feeling creative. Freeze it for 10 minutes (so your shapes hold while baking).
  6. Meanwhile, make the frosting: In a large bowl using a hand mixer, beat butter until smooth, then add powdered sugar and beat until no lumps remain. Add cream, almond extract, and salt and beat until combined.
  7. Bake cookies until the edges are lightly golden, 8 to 10 minutes. 
  8. Let cool, then frost and decorate as desired.

Dulce de Leche

You can step up the sweetness this season by making your own Dulce de Leche.

Aside from enjoying it on its own, you can drizzle Dulce de leche on ice cream, add it to your usual brownies, or layer them in smores. There are so many ways to enjoy this versatile dessert, and it will be so easy to make at home with the help of an induction cooker! 

A staple in smaller homes, an induction cooker can do a lot of wonders. This heat-tempered glass worktop has a timer and child-lock, meaning you can cook dishes safely and precisely while you bond with your kids in the kitchen.

Ingredients:

  • 8 cups of whole milk
  • 2 to 2 ½ cups sugar (adjust based on your preference)
  • 1 tsp vanilla
  • ¼ tsp baking soda

Directions:

  1. Combine all the ingredients in a large pot over medium-low heat, stir until the sugar or panela is well dissolved. Reduce the heat to low.
  2. Continue cooking until the mixture is significantly reduced and starts to thicken while the color changes from a creamy beige to a caramel tone. It will take between 2 ½ hours to 3 hours for the dulce de leche to be done.
  3. During the first 1 ½ hours you will need to stir occasionally to prevent it from boiling over and sticking. During the last hour, it needs to be stirred more frequently and has to be watched very closely to keep it from burning – you can also decrease the heat to low. 
  4. Cook it until it has a dark amber or caramel tone and has a creamy consistency. Keep in mind that it will thicken more when it cools down.
  5. The final product can be served warm or cold and must be kept refrigerated.

Preparing this particular dish may look like a daunting task, but it’s actually pretty easy to make. 

Ingredients:

  • 1 cup rice flour
  • 1/8 teaspoon salt
  • 2 1/2 teaspoon baking powder
  • 3 tablespoons butter
  • 1 cup granulated sugar
  • 1 cup coconut milk
  • 1/4 cup fresh milk
  • 1 piece salted duck egg sliced
  • 1/2 cup grated cheese
  • 3 pieces raw eggs
  • Pre-cut banana leaf

Directions:

  1. Preheat your oven to 375 degrees Fahrenheit. Meanwhile, combine rice flour, baking powder, and salt then mix well. Set aside.
  2. Cream the butter then gradually put-in sugar while whisking. Then, add the eggs then whisk until every ingredient is well incorporated.
  3. Gradually add the rice flour, salt, and baking powder mixture then continue mixing.
  4. Pour in coconut milk and fresh milk then whisk some more for 1 to 2 minutes.
  5. Arrange the pre-cut banana leaf on a cake pan or baking pan.
  6. Pour the mixture on the pan, then bake for 15 minutes.
  7. Remove from the oven then top with sliced salted egg and grated cheese (do not turn the oven off).
  8. Put back in the oven and bake for 15 to 20 minutes or until the color of the top turns medium brown.
  9. Remove from the oven and let cool. Brush the dish with butter and sprinkle some sugar on top once it cools. You can also top this with grated coconut.

#QuarantineCookbook: Egg Pie

One of my favorite merienda items back when I was little was the egg pie.

I just love the creamy custard filling that’s perfectly complemented by a buttery and flaky crust.

To this day, I still find myself craving for it from time to time, especially during my coffee break.

While it is readily available in my neighborhood, whether via delivery apps or by dropping by a mom-and-pop bakery, I figured it was best to make it from scratch at home, especially since I got hold of this recipe which seems to easy to make.

Ingredients:

Crust

  • 1 1/2 cups all purpose flour
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/2 cup cold butter, cut into small cubes
  • 4 tbsp water

Filling

  • 3 whole eggs
  • 1 egg yolk
  • 1 egg white
  • 1 tsp vanilla
  • 1 300ml condensed milk
  • 1 370ml evaporated milk

Procedure:

To make the pie crust:

  • Combine flour, salt, sugar and butter in a bowl. Mix until fine crumbs form.
  • Add the water and mix until a dough is formed. Cover it in plastic wrap and refrigerate for at least one hour.
  • Roll out the dough on a flour-dusted board until it is 1/8-inch thick.
  • Transfer the dough to a lightly greased 9-inc round pan. Trim the excess dough and press the tines of a fork against the edges to create a design, then set aside.

To make the filling:

  • In a bowl, whisk together three whole eggs and one egg yolk.
  • Add the vanilla, condensed milk and evaporated milk, then stir well until thoroughly combined.
  • Strain the mixture twice, then set aside.
  • In another bowl, beat the egg white until stiff peaks form, thrn gently fold into the filling mixture.

To bake the pie:

  • Pour the filling into the prepared pie crust.
  • Gently tap the pie pan against your work surface to get rid of air bubbles.
  • Bake the pie in a pre-heated 180-degree C oven for forty-five to fifty minutes pr until the top turns brown.
  • Serve and enjoy!

Antipolo Resto: Yellow Bird Cafe x Kitchen

Up in the suburbs of Antipolo is a refreshing and delicious escape from the urban jungle called Yellow Bird Cafe x Kitchen.

I discovered this when I took my parental units out on an Antipolo joyride (!) as my advanced birthday treat for my dad.

To be honest, I was supposed to take my parents to another cafe in Antipolo but had to make a last-minute change of plans upon finding out that the other cafe’s premises might not be suitable for seniors.

With only minutes to spare, I scanned my Facebook feed for a place where the parental units would be more comfortable and I came upon Yellow Bird Cafe x Kitchen.

So, together with my daughter #ExhibitA, I picked up the seniors and off we went to this Antipolo resto which is luckily a mere twenty-minute drive away from our homes in Pasig.

The cafe is a welcome surprise that will greet your eyes as you turn from the busy highway and take your pick among the available parking spaces around the bend. From outside, the lush greenery surrounding the glass-walled structure looks both picturesque and inviting.

Since the restaurant is operating only on a fraction of its original capacity, there is already a queue of people waiting to be seated by the time we got there, despite the considerable seating spaces in both the ground and upper floors, as well as in the al fresco area.

As I have seniors in my party, we were seated at the al fresco area on the other side of street from the main dining hall. While this dining space may be quite hot during the early afternoon of our visit, the discomfort is somewhat eased by the presence of plants artfully arranged around the place.

Our light and delicious afternoon repast included:

Potato Wedges (Php130). Thick, deep-fried wedges of potatoes lightly seasoned with salt and pepper.

YB Nachos (Php210). Crisp toasted nachos drizzled with melted cheese and topped with sauteed beef, tomatoes, green onions and parmesan.

Club Sandwich (Php195). Two layers of sliced ham and chicken, lettuce and tomato in creamy dressing in between slices of toasted homemade bread, and served with a side of YB Nachos.

Wagyu Cheeseburger (Php365). Thick grilled patty of Wagyu beef topped with melted cheese and sandwiched together with lettuce, tomato, cucumber and burger sauce in between lightly toasted and buttered homemade burger buns, served with a side of YB Nachos.

Grandma’s Chocolate Cake (Php155). Decadent chocolatey treat made with chocolate sponge cake covered in rich milk chocolate icing and topped with dark chocolate shavings with thin layers of caramel filling inside.

Basking in Bali: The Ubud Tour

One of the most popular things to do in Bali is going on a tour of the nearby Ubud area.

During our trip in Bali, Indonesia, Hubby and I decided to take a breather from lounging about at the Nusa Dua Beach and strolling around the enclave surrounding Courtyard Bali Nusa Dua Resort where we were staying.

We hired a van to take us on a day trip to the region widely considered to be the cultural capital of Bali.

About Ubud

The town of Ubud is situated in the uplands of Bali. Surrounding it are rain forests and rice paddies, an area lush with greenery and dotted with temples and shrines.

The place gets its name from the Balinese word ubad which translates to “medicine,” indicative of the area’s first claim to fame as a source of medicinal herbs and plants.

Today, it is the center of Bali’s art and culture scene, being home to a number of museums, artist communities and art markets that we were able to check out during our Ubud Tour.

Barong and Keris Dance

The village of Batubulan has been known for daily performances of the Barong and Keris Dance.

This dance dramatizes the mythical battle between the good spirit Barong and the evil spirit Rangda, and provides a fascinating insight into Balinese culture.

Artists’ Villages

Balinese art takes centerstage in Ubud where local artisans inhabit their own villages where they craft traditional paintings, textiles, jewelry and carvings, many of which are for sale at reasonable prices.

Batuan is also home to awesome temples that feature Balinese architecture and elaborate carvings.

Batuan also prides itself on its traditional paintings which are characterized by detailed designs in sombre colors depicting mythical or religious elements against black or white backgrounds that call to mind the supernatural.

Tohpati, on the other hand, is home to batik, a decorative textile technique involving the use of wax and dyes to create intricate patterns. Aside from clothing, batik is used for a myriad of items including household accessories, furniture fabrics and giftware.

Meanwhile, the silversmiths in Celuk are masters in creating intricate jewelry and luxurious decor.

Lunch at Batur Sari Restaurant

We had our lunch in a restaurant perched on top of the Kintamani. Called the Batur Sari Restaurant, it provides its guests with a traditional Indonesian meal served buffet style meant to be enjoyed while marveling at the view of Mount Batur and its surrounding crater lake.

Unfortunately, the view was covered by a thick fog during our visit. However, the fog did give the effect of dining while surrounded by clouds, which is an experience in itself.

Sebatu Temple

After a long-ish drive from Kintamani, our next stop is the Gunung Kawi Sebatu Temple, known locally as Pura Tirta Dawa Gunung Kawi Sebatu.

Dedicated to the Hindu god Vishnu who is said to hold dominion over water, it is one of the least visited temple complexes in Bali, but is also one of the most tranquil and picturesque, marked by spectacular water features (including bathing pools for pilgrims), fountains teeming with carp and lush gardens.

One of its most breathtaking scenery is a sculpture of the Hindu goddess Sarasvati at the center of a large pool.

Tegallalang Rice Terraces

A short distance away from the Sebatu Temple is the famous Tegallalang Rice Terraces, a vast expanse of beautifully arranged rice paddies carved from the hillsides by ancient Balinese farmers following the traditional Balinese irrigation system called subak.

It has been listed as a UNESCO World Heritage Site, adding to its “must-visit” appeal.

From the viewing deck, one can see the cascade of green crops down the slopes while enjoying the cool mountain breeze.

Given my general avoidance of any physical exertion, we declined the opportunity to traipse down the slopes and walk across to the greenery.

Coffee and Tea Tasting at Alam Bali Agriculture

Indonesia produces some of the world’s finest coffee and also happens to be fourth largest coffee producer in the world.

Within Tegallalang region is a coffee and tea plantation called Alam Bali Agriculture which houses gardens that grow various kinds of beans, leaves and herbs.

After a short tour of the grounds, we were treated to a flight of freshly brewed coffee and teas which were grown on site such as Arabica, Coconut, Vanilla and Ginseng coffee, as well as Lemongrass, Ginger and Mangosteen tea.

Sunset Seaside Dinner at Ayu Bali Resto

After such a jam-packed itinerary, our day of sight-seeing culminated at Ayu Bali Resto in Badung.

There, I was finally able to find a swing that doesn’t make my fear of heights go haywire.

While getting serenaded by live acoustic music accompanied by the sound of waves, we enjoyed a sumptuous seafood dinner by the beach.

This one-day tour of Ubud gave Hubby and me an interesting glimpse of Balinese life and culture.

Here and there: Shake Shack

Oh yes, burger joints do abound all over the world and diners have their choice of where to get their burger fix.

The challenge, really, is for the burger establishment to have something extra going for it that will drive people to seek it out, try its offerings and (hopefully!) come back for more.

While it started out as a roadside food stall (that didn’t even sell burgers!) in Manhattan, Shake Shack has evolved into a burger eatery with a fine dining mentality, where high quality versions of the usual burger joint offerings are served up in a more upscale setting.

During a family trip to the US nearly three years ago, we decided to have our lunch at ShakeShack’s outlet along Hollywood Boulevard.

It seemed to be a popular joint as we had to line up for a few minutes before getting to the counter.

We tried an assortment of burgers such as the ShackBurger (ShakeShack’s famous cheeseburger with lettuce, tomato and ShackSauce), the Shroom Burger (crisp-fried portobello mushroom filled with melter muenster and cheddar cheese topped with lettuce, tomato and ShackSauce), and the SmokeShack (cheeseburger with Applewood smoked bacon, chopped cherry pepper and ShakeSauce) which we all found to be very tasty and filling enough to fuel us for the rest of our sightseeing that day.

Of course our order wouldn’t have been complete without ShakeShacks crinkle-cut fries and shakes.

It was among the foodie experiences that we had in the States that we wish could be replicated back home in the Philippines.

And wouldn’t you know it: by the time we got back to Manila, Shake Shack was already here!

It opened its first store in Bonifacio Global City in May 2019, a second branch in SM Mega Fashion Hall in December of the same year, a third one in Greenbelt Makati in October 2020, and finally, a fourth outlet in Alabang Town Center in July 2021.

Well, life got in the way so we haven’t been able to visit any of these local outlets from the time we got back, until Hubby and I went on an errand run in SM Megamall recently.

There, we espied Shake Shack’s sprawling premises while we were walking around, and decided to have lunch right then and there.

While I decided to go for a ShackBurger, Hubby went for a Chick’n Shack (crispy-fried chicken breast with lettuce, pickles and buttermilk herb mayo).

To complete our meal, we also got some crinkle-cut fries and softdrinks.

Because of COVID restrictions, there were not a lot of people in the place (only fully vaccinated people can dine in) and just a fraction of the store’s capacity is allowed to be used.

Now that the restrictions are loosening, I hope I can bring the kids over soon so we can relive one of our fun-filled adventures.
