Ferino’s Bibingka Merienda Blowout

With all the time spent at home with the fam, I’m glad I was able to find the opportunity to reacquaint the kiddos to our rich culinary heritage.

This initiative was greatly helped by my mother-in-law when she treated her kids and their respective families to a Pinoy-style merienda during her recent birthday by having local delicacies from Ferino’s Bibingka delivered to our respective homes.

Ferino’s Bibingka

Bibingka is kind of kakanin or rice cake made with galapong (glutinous rice flour) and cooked in clay pots lined with banana leaves. While it can be enjoyed year-round, bibingka is especially popular during the holiday season; it is the go-to food to be enjoyed after Misa de Gallo.

Ferino’s Bibingka started in pre-war Tondo, Manila when Ceferino Francisco, Sr. (also known as Mang Ferino) starter selling bibingka and puto bumbong on the sidewalk outside their rented apartment. The business grew after the war, such as when they opened Ferino’s Cafe in the Manila Hotel in the 1950s, another branch at the Fiesta Carnival in Cubao in the 1970s and more afterwards.

Most of these stores closed down with Mang Ferino’s passing but the Ferino’s Bibingka brand was revived by his grandson, Sonny Francisco, who began to operate bibingka dine-in and takeout stores in 2016.

Ferino’s Bibingka’s storied dishes made their way to our table by way of the Family Set 1 (Php880) sent by MIL as her birthday blowout. This set consisted of:

Bibingka Extra Super. Pure galapong mixed with two fresh eggs, topped with salted eggs and kesong-puti.

Pancit Palabok (Small Bilao). A traditional Filipino noodle dish which is made with round rice noodles doused in a gold-colored savory sauce topped with shrimp, crushed chicharon (pork rind), slices of hard-boiled egg and chopped green onions.

Pork Barbecue (6pieces). This popular Pinoy street food of pork barbecue consists of slices of pork skewered on bamboo sticks, marinated in sweet and savory barbecue sauce then grilled to smokey and tender doneness.

Palitaw sa Linga. Another kakanin which is made of flattened ground glutinous rice which are dropped in boiling water. The rice cakes rise up to the surface (“litaw“) when cooked which is how the dish got its name. It is served dipped in grated coconut, with a side of sugar and sesame seeds (“linga“).

Fish & Chips (Php350). A lighter choice on the tummy but no means lacking in flavor is this staple from London. Large slices of fish battered and deep fried to a crispy golden brown and served with deep-fried potato wedges. It’s best when eaten hot so I reheated it in the oven when I had it for dinner.

Quarantine Party? Get some pizzas from Pizza X

And just like that: the year is almost over and we have already struggled through nine months under quarantine.

While the pandemic certainly is life-changing, there’s no denying that life certainly must and will go on. And with life comes all the milestones we use to mark the passage of time, such as birthdays.

Being a December baby, my son, #ExhibitB, also known as Gabe, is the last in the family to have a birthday this year. During the pre-pandemic period, the whole extended family – including grandparents, uncles, aunts and cousins on both sides – would usually gather at a restaurant of his choosing to enjoy good food together. These celebrations would invariably involve pizza, my son’s favorite food.

This kind of get-togethers are not possible for the meantime, so the challenge for us was: how can we have a shared pizza experience with our loved ones during #ExhibitB’s special day?

This new online food business was developed by entrepreneur Cheryl Camungao during the quarantine as a way to drag her kids away from their gadgets and teach them about business and how to earn money.

Being pizza lovers themselves, her kiddos – thirteen-year-old Chase and ten-year-old Herc – set about crafting and promoting pizzas that their fellow kids would go crazy for and came up with six flavors for Pizza X which I was able to sample with the fam.

Tropical Xplosion. You know what: I never joined the clamor against pineapple on pizza. For me, the combination of sweet and tangy crushed pineapples with double smoked bacon, onions and bell peppers works just fine.

Angus Xtreme. Meat lovers will have much to love with this creation made with savory Angus beef, mushrooms, bell peppers and onions.

    So, during our recent errand run in Greenhills, Hubby and I picked up a Box of 6 Krispy Kreme’s Original Glazed (OG) donuts (Php225) to bring home some joy for the fam.

    While Krispy Kreme offers a multitude of donut variants, the fam would always gravitate towards the OGs. My fam is no exception to the appeal of their simple presentation, soft and fluffy texture and straightforward sweetness.

    Taking inspiration from its box, I present to you six reasons to smile from Krispy Kreme (aside from the donuts, themselves). So here are some nuggets from Krispy Kreme’s storied past which might bring a smile to your face.

    1. Starting over.

    When their general store in Paducah, Kentucky where the original donuts were sold suffered during the Great Depression in 1934, brothers Vernon and Lewis Rudolph and their uncle Ishmael Armstrong moved to Nashville, Tennessee where they focused on selling their donuts under “The Krispy Kreme Doughnut Company.” Can you imagine if they just gave up after their first taste of failure?

    2. Get ’em hot!

    Rudolph opened his first store in Winston-Salem, North Carolina in 1937. While mainly selling his donuts to convenience stores, he also sold hot donuts – fresh from the production line – to customers who came during production time between midnight and 4am. I guess, night owls in those times were lucky indeed!

    Well, soon, with a surge in demand, hot donuts were soon on offer throughout the day. In 1992, the first “Hot Doughnuts Now” lights were installed in stores to signal to customers that a fresh batch of donuts are ready to be enjoyed.

    3. Donuts for a good cause.

    Starting in 1955, schools, clubs and churches ordered donuts by bulk for reselling. Doing so has allowed these organization to raise funds for uniforms, school trips, libraries and more.

    4. Switch to automation.

    Until 1963, Krispy Kreme donuts were made by hand. That changed when the company switched to automation, enabling its output to grow with the demand.

    In 2000, Krispy Kreme broke away from making its usual round donuts by playing around with different shapes. The heart-shaped donuts enjoyed quite a bit of popularity, with orders peaking around Valentine’s Day.
