The Jelly List: Four ways to keep the holiday spirit despite the pandemic

Whenever the calendar turns towards the -BER months, around the same time when we Pinoys start to feel (or imagine!) that the breezes are getting cooler, and we start hearing Christmas carols on continuous loop in the malls, we also get all caught up in the anticipation for fun and festivities of the holiday season.

Those are all just part of the holiday spirit.

However, with the COVID-19 pandemic still raging across the world, the loss of loved ones due to the sickness, the closure of many businesses and unemployment of many workers, can it still be Christmas?

My answer: yes, of course!

We Pinoys love Christmas so much that we won’t let COVID-19 cancel the holiday that brings hope and joy to everyone.

This holiday season, because of the restrictions to mobility or limitations on budget brought about by the pandemic, we won’t be traveling to places in our bucket list, gathering in boisterous families with our clan, nor squeezing into crowded malls for our Christmas shopping. But we can still have a merry – and even more meaningful – Christmas in this time of COVID-19.

Here are some ways to go about this:

1) Spend wisely

Given all the financial uncertainty that many of us are facing, now is not the time to splurge. Your Christmas bonus or aguinaldo may be needed for some unexpected expenses later on.

That said, you can still get a bit of holiday retail therapy done if you employ a bit more effort or creativity.

Prioritize buying the essentials – such as food, clothes and health products – but look for great deals. For instance, Shopee’s 11.11-12.12 Big Christmas Sale includes Php1 deals on selected fashion, self-care and stationery items which users can enjoy during the period leading up to December 12.

Shopee 11.11-12.12 Christmas Sale

You can also find ways to buy what you need without having to shell out cash. Your loyalty points may already have accumulated to a sizable amount that you can use them to purchase items. Case in point: I once bought over Php1,000 worth items from Miniso using my BDO Rewards points.

2) Be together, while staying apart.

One of the most difficult adjustments that this New Normal has brought about is the need for physical distancing. Especially among us Pinoys who are naturally outgoing and affectionate to our loved ones, being physically separated can be quite stressful.

While technology can’t take the place of a loved one’s actual physical presence, some small acts of thoughtfulness can chase away the feelings of isolation.

Our seniors, being high-risk individuals, bear most the brunt of these physical restrictions. Confined to their homes for months now, they can’t go out to stretch their legs or chat with their amigos and amigas. Be sure to check in on them regularly and cheer them up by sending pictures or video clips of the mundane yet happy moments that occur everyday, My mom, for instance, really appreciates when my kids video-chats with her via FB messenger.

Since the barkada can’t physically get together for a round of drinks, how about holding an e-numan sesh over Zoom? Send a ready-to-grill pack of barbecue or isaw from Mang Ding’s to your friends before the sesh to go with your favorite drinks while having your virtual bar hangout.

Mang Ding’s Marikina

You can also make and share a Spotify playlist of your favorite songs from childhood with your friends so you can all reminisce about the hits from the past as well as share a laugh over your collective taste in music.

The key is to share a happy and memorable experience even while staying physically apart.

3) Give gifts that keep on giving.

For many of us, budget is pretty tight, even during the holiday season. That doesn’t mean, however, that we can’t show our love for our family and friends through gifts. In fact, a well-chosen gift that takes the needs of the recipient into consideration, especially during this time, will be greatly appreciated.

For instance, rather than giving the usual gift baskets or knick-knacks, gift your friends with groceries, care packs or hygiene kits instead. These are supplies that they will no doubt need in the coming days so by giving them as gifts, you are eliminating something from their to-buy list, thus saving them money and effort.

You can also choose to send gifts that support small businesses such as online food sellers that offer family trays of Filipino dishes or new bakers that offer boxes of monster-sized cookies. These thoughtful food gifts save the recipient from the hassle of preparing a meal or indulges their cravings.

Extra Butter

How about gifting a loved one with a present made by your own hands? If you’ve taken up crocheting or knitting as a quarantine pastime, now would be a good time test your skills with some bespoke projects for your friends. If you’re among the plantitas or plantitas who sprouted during the lockdown, give your friends a cutting or a pot of your plants that they can have their own plant-babies to nurture in the coming year.

4) Share the love.

While life under COVID-19 may be hard on us, we know that other people may have been harder hit by the pandemic. Even if you don’t have a lot to give, you can still find ways to share your blessings to those in need.

For instance, if you’ve recently emptied out and reorganized your closets for the New Normal, you may have a lot of old clothes that can be donated to charities.

You can also use your loyalty points to give to charity. For example, you can redeem your GrabRewards points to donate to WWF, Red Cross, Unicef and more.

The pandemic may continue to wreak havoc in our lives well into the holiday season and even beyond. But it is up to us to keep that flicker of Christmas cheer burning despite all the challenges and difficulties of 2020, not just for our own enjoyment, but more importantly, to spark hope for others.

Happy holidays, dear readers! Stay safe!

Four reasons why you should choose cage-free eggs

Eggs are part of our daily food intake: from the sunny-side-up fried eggs we have for breakfast, a vital ingredient for our soups, sauces and other viands, to part of the batter for our favorite cakes and pastries.

Cage-free eggs

Cage-free eggs

Have you ever wondered how the eggs you eat are produced?

If you’re picturing a farm girl serenely picking eggs inside a barn in an idyllic farm setting during the wee hours of the morning, you’re way off the mark.

Eighty-five percent of the eggs produced in the Philippines come from hens living inside battery cages. In these contraptions, they don’t have enough space to stretch their wings, move around and exhibit other natural behaviors such as perching, nesting, dust bathing and foraging.

Preventing the expression these behaviors leads to the hens’ frustration, distress and even physical problems.

(Some of us have complained about the stress and frustration being confined in our homes while still expected to work and function as usual during lockdown. Imagine how much worse the situation is for these hens!)

Having evolved as the species at the top of the food chain, we ought to take better care of our food source such as egg-laying hens for economy, sustainability, as well as our own humanity.

Cage-free eggs

Cage-free eggs

One way to do just that is to support egg producers with cage-free systems. These environments include aviary and free-range systems that allow hens to exhibit their natural behaviors as well as provide opportunities for improved welfare of the hens such as perching space, litter space for dustbathing and foraging, nest boxes and environmental enrichments, among others.

Here are four reasons why we should go cage-free:

Food safety. Did you know that salmonella – the type bacteria that causes food-related illnesses such as stomach cramps, diarrhea, fever and stomach pain – are five times more likely to be found in cage systems than in cage-free ones? This is attributed to factors such as the hens’ acquisition of healthy gut flora, stress levels and susceptibility to disease when comparing the systems.

Cage-free eggs

Egg quality and health. According to numerous studies, cage-free eggs have a healthier overall nutritional profile. They have less saturated fat and cholesterol, higher levels of protein, Vitamins A and E, alpha tocopherol and alpha linolenic acid, carotenoid and beta carotene, as well as a healthier ratio of omega 6 to omega 3 fatty acids.

Cage-free eggs

Animal welfare. Across the world, more and more consumers are supporting a shift towards cage-free systems as it has been proven to to give the hens a better quality of life during their egg-laying cycle and is part of an ethical and sustainable food production practice.

Cage-free eggs

Market and production. Cage-free systems, especially for backyard farmers, benefit from reduced production costs as well as access to better markets as consumer education and preference for eggs produced in cage-free environments are on the rise.

So how can we help in bringing about this welcome change in egg production?

Buy cage-free eggs instead of regular eggs. As demand for these eggs rise, more egg producers will shift to cage-free systems.

Dine at (or order from) restaurants that use cage-free eggs. Restaurants are among the top institutional purchasers of ingredients and their patronage can go a long way towards supporting cage-free farmers.

Tell your family and friends to choose cage-free eggs. Encourage your little ones to practice sustainable consumption of resources and help spread the word on the Cage-Free, Cruel-Free Campaign.

BonChon lunch while working from home

It has become an all-too-familiar lament among us parents who are working from home: juggling all the tasks we are supposed to deliver for our jobs and overseeing the kiddos who are still adjusting to distance learning leave us very little time to prepare tasty meals for the fam to enjoy.

BonChon, Sta. Lucia

Fortunately, a solution to this quandary is just a few phone taps away, thanks to our trusty food delivery apps.

On one such busy day, Hubby decided to order our lunch from the BonChon branch nearby.

BonChon, Sta. Lucia

This chicken resto chain was founded on 2002 by entrepreneur Jinduk Seh. After spending two years perfecting the soy garlic and spicy glaze for his fried chicken, he opened his first resto BonChon (or “my hometown”) in Busan, South Korea. By 2010, it has made its way to the Philippines, just in time to help sow the seeds of the Korean obsession of Pinoys.

BonChon, Sta. Lucia

Considering the fam’s considerable collective appetite, Hubby decided to get 6 pieces (Php462) + 8 pieces (Php613) assorted chicken pieces, all with our favorite soy garlic glaze.

BonChon, Sta. Lucia
BonChon, Sta. Lucia

Giving in to his daughter’s request, he also ordered a Mandu Box Meal (Php199). Mandu are basically Korean dumplings. BonChon’s version is deep-fried and glazed with soy garlic, similar to the chicken.

BonChon, Sta. Lucia

All we had to do is make sure we have lots of steamed rice ready for our meal.

As luck would have it, my morning meeting extended to lunchtime so my baby girl assembled a plate for me to eat while on telecon (my brain can’t function on an empty stomach, you know!)

BonChon, Sta. Lucia

So that’s it: the whole fam satisfied with a tasty meal, quick and easy!

McDo-snackin’ with the fam

A few days ago, I received a very welcome piece of news: McDonalds Shakes are back and they’re here to stay!

I didn’t realize how much I’ve missed this childhood treat.

That got me thinking: I have been working hard lately, putting in a lot of hours in telecons and drafting presentations. Hubby, too, has been pretty busy with his job, while the kiddos have been dealing with their adjustments to distance learning. Hmm… don’t we all deserve a reward?

So I took out my phone and a few taps later, my treats for the fam were on their merry way to our doorstep.

McDonald’s, Santolan

A little taste of our favorite fast food every now and then can’t hurt, right?

Check them out:

Big Mac Meal (Php207 with medium Coke and medium fries). Oh, yes… the 🎶 two all-beef patties, special sauce, lettuce, cheese, pickles, onions on a sesame-seed bun.🎶 For those who are below forty years of age, one of McDonald’s early advertising campaigns in the country was hinged on listing the ingredients of the Big Mac in a TVC that had a whole lot of airtime. There’s no surprise, then, that many of my generation know this list by heart, and that some, like my Hubby, would consider it his go-to McDo order, inseparable from the fries and Coke.

Cheeseburger (Php62). For those of us – like me and my little boy – who can’t handle the size and the sheer commitment of tummy space that a Big Mac requires, this burger made with ground beef topped with cheese, onions, pickle slice, ketchup and mustard in a toasted bun will have to do.

Comfort food delivery from Pares Retiro, P. Tuazon

Lately, we’ve been craving for comfort food, right?

Now more than ever, we’re looking for that feeling of well-being and fullness that comfort food brings.

Pares Retiro, Cubao
Pares Retiro, Cubao

An example of Pinoy comfort food that I was happy to rediscover is beef pares. This dish is braised beef stewed in a savory-sweet sauce and served with garlic fried rice, making winning combo indeed!

For me, the benchmark for beef pares is the one I tasted prior to the quarantine, when my officemate and I had our lunch delivered from the Pares Retiro near our office. I guess that’s why this resto chain was dubbed the best pares in town. I get cravings for it sometimes since then.

Pares Retiro, Tomas Morato

However, I’ve been stuck at home for the past few months and the nearest Pare Retiro is too far for delivery.

That is, until GrabFood made Pares Retiro in P. Tuazon available for long-distance delivery. Yey!

I found out about it when Hubby gave in to his late-night cravings and had some beef pares and bone marrow delivered for us to devour in between episodes of the K-drama we’re bingeing on.

Pares Retiro, Cubao
Pares Retiro, Cubao

(Spoiler Alert: they were gone in mere minutes that I haven’t been able to take decent pictures!)

That late-night taste intensified my craving for the dish again so I decided to order from Pares Retiro via GrabFood for our dinner.

Tonight, the kiddos and I feasted on:

Classic Pares Meal (Php208). That winning tamdem of beed pares and garlic fried rice. The slow-braised meat is fork-tender and the sauce has the right dynamic between sweet and savory that goes so well with the garlic fried rice.

Pares Retiro, Cubao

Pares Tendon Meal (Php214). The classic pares dish made even more irresistible with the addition of melt-in-your-mouth pieces of imported US beef tendon that adds flavor and texture to the dish.

Pares Retiro, Cubao

Bone Marrow (Php189). Roasted bone marrow flavored with herbs and spices. Add a bit of bone marrow to each bite of pares and rice and you’ll see why the fam and I got obsessed with it. I only wish there was more of it.

These dishes are not high-brow nor elaborate. Instead, they are simple dishes that give us comfort especially during these trying times.

Japanese dining for the fam at Teriyaki Boy

For years now, my family has been getting our Japanese food craving satisfied by Teriyaki Boy.

This local chain under the Max’s Group occupies the space between fast-food and high-end Japanese restaurants by offering the fam’s Japanese food faves at reasonable prices.

Teriyaki Boy, SM City East Ortigas

Our go-to branch is the one nearest our home located at SM City East Ortigas. Here, we feast on classic such as:

Tonkatsu (Php289). My son’s favorite Japanese dish consisting of a tender piece of pork cutlet that’s been breaded and deep-fried to a crispy golden brown and served with shredded cabbage and drizzled with sesame dressing along with a tangy-sweet katsu sauce.

Dynamite Sushi (Php114/4 pcs | Php210/8pcs). This sushi roll made with fresh tuna, chili oil, togarashi and Japanese mayo is one of the ploys employed by Hubby to stimulate my appreciation for spicy food.

Teriyaki Boy, SM City East Ortigas

Another bonus of dining at this particular branch is that it shares the space with another Max’s Group brand, Sizzlin’ Steak, enabling Hubby and me to also sate our craving for steak by cross-ordering an Australian Marbled Steak (Php699) for each of us. This tender and juicy piece of imported meat, grilled to our preference (medium to medium-well) and served with rice, French beans, cherry tomatoes and herb butter on a sizzling plate, ready for the satisfying sight, sound and smell of flavorful gravy being poured over it.

Red Velvet Cake from Lia’s Cakes in Season

Momshies, did you know that red velvet cake is actually made with cocoa, making it, in essence, chocolate cake?

Lia’s Cakes in Season, Kapitolyo

It’s a classic dessert favorite in the Southern US states, said to have originated in Maryland in the early 20th century. It gained the moniker “velvet” cake for having soft and velvety crumbs as opposed to its coarser crumb contemporaries.

During the food rationing of World War II, bakers started adding boiled beetroot to their cake ingredients to help them retain moisture and its juices to add color to their creations.

Traditionally, bakers used a light and fluffy French-style roux icing to decorate the red velvet cake. Variations using cream cheese of buttercream frosting came later.

I was recently gifted by a fellow momshie with a whole Red Velvet Cake from Lia’s Cakes in Season.

Lia’s Cakes in Season, Kapitolyo

This dessert store is practically a landmark in the foodie haven of Kapitolyo in Pasig City. Set up by young entrepreneur Carlo Carlos in 2004 to feature “fruits-to-cakes in season,” cakes and pastries that creatively incorporate the freshest fruits in season.

Its Red Velvet Cake (Php990 whole | Php140 per slice), however, is the store’s take on the classic fave. It consists of a moist chocolate cake (colored a deep red, of course), wrapped in a smooth buttercream icing and topped with crystal bits for added texture.

Lia’s Cakes in Season, Kapitolyo

To get your hands on this decadent delight, order through Lia’s Cakes’ online store or call +63 917 6605427 (minimum order of Php850) for delivery to anywhere in Metro Manila. Delivery is free for website orders over Php2,000.

Meringues from Brownies Unlimited, SM Megamall

Brownies Unlimited may be your go-to place for various kinds of fudgy brownies, but did you know you can also pick up some special meringue desserts here, too?

Brownies Unlimited, SM Megamall

Meringues are light and airy confections traditionally made with whipped egg whites and sugar baked at low temperatures to achieve a signature crisp exterior.

Brownies Unlimited, SM Megamall

Variations of meringues can be found in many parts of the world.

Here in the Philippines, among of the most popular meringue desserts are the silvanas. Made of cashew meringue wafers coated with cookie crumbs enveloping buttercream, it is a decadent delight for many dessert lovers.

Brownies Unlimited, SM Megamall

Sambos, on the other hand, is the twin dessert of silvanas, wherein cocoa powder and coffee are added to the buttercream before sandwiching it between cashew meringue wafers then coating the resulting confection with chocolate cake crumbs.

Brownies Unlimited, SM Megamall

After a bout of shopping, Hubby brought home a box for the kids to get a taste of these desserts. I found that these differ from traditional versions by having a rounder, puffier shape as opposed to the ones from Dumaguete that are more disc-shaped.

You can get these meringues at Brownies Unlimited for Php40 a piece or get a box of 6 for Php220.

Brownies Unlimited, SM Megamall

These silvanas and sambos go well with coffee for a post-meal dessert or with iced tea for a late afternoon sweet snack. These are also great for pasalubong, contributions for potluck parties or as holiday gifts for dessert lovers.

Brownies Unlimited, SM Megamall

It’s best to keep them frozen prior to serving.

So, are you Team Silvanas or Team Sambos? How about Team Both? 🙂

Brownies Unlimited also delivers via GrabFood and FoodPanda.
