Baked Donuts from Bake My Day, Libis

After a bout of food shopping at the nearest All Home Supermarket (the one in Libis), I espied upon its pastry shop near its exit.

I immediately thought of my kiddos keeping themselves quarantined at home. I know them to be great donut fanatics so I decided to treat them to a box of half-dozen donuts from Bake My Day, which costs only Php300.

Bake My Day is one of the newer retail brands under the Villar Group of Companies, which serves pastries freshly baked everyday. Its presence in the All Home premises proved to be quite convenient for me as I didn’t have to drive off to a separate pastry shop for some pasalubongs for my kids.

Upon biting into my donut (of course I get to have a piece!), I noticed some differences versus the usual donut. My almond on white chocolate glazed donut does not have the slightly crispy exterior nor the chewy interior I was expecting. It has a fluffy mouthfeel, sort of like biting into a muffin.

I had a facepalm moment when my daughter #ExhibitA blurted out the reason for the differences in texture: “Ma! Kasi Bake My Day nga!

So apparently, the differences in texture I’ve been noting result from the donuts being baked as opposed to fried.

Well, everyday I learn something new!

That said, the almond donut I had was suitably sweet, perfect as a dessert after dinner with the kids.

And since they wiped out the remaining five donuts before the day is through, I’d say they liked them too.

#QuarantineCookbook: Homemade Mango Ice Cream

How’s your summer going, foodies?

If you’re feeling the summer heat like I am, you might be craving for some lusciously decadent ice cream packed with the flavors of summer.

And what can be more summer-y than mango? Ooh, just imagine the sweetness of ripe mango bursting in your mouth from the cold, soothing silkiness of ice cream.

If only it was more readily available, right?

I usually had to go to large supermarkets or specialty stores to get a tub of mango ice cream. However, with the enhanced community quarantine, stores would have a lot more difficulty keeping it in stock.

Well, thanks to my mommy, I found out how to keep my own stock of yummy mango ice cream: I just have to make it myself!

Mommy made me a batch of homemade mango ice cream for my birthday. What’s even better is that she gave me the recipe!

Homemade Mango Ice Cream

It’s actually quite simple. Check it out!

Ingredients:

  • 1 cup of mango puree (made by blending the flesh of two ripe mangoes in a blender)
  • 1 300ml can of condensed milk
  • 2 cups of heavy whipping cream
  • 2 drops of yellow food coloring

Procedure:

  • In a bowl, mix together the mango puree, condensed milk and heavy cream at low speed until the mixture begins to thicken.
  • Increase the mixer speed to medium and continue mixing until the mixture forms stiff peaks.
  • While mixing, food coloring.
  • Transfer the mixture into a small loaf pan or ice cream tub, gently pressing the mixture into the container using a spatula.
  • Freeze for at least six hours or overnight

This recipe serves four, at approximately 680 calories per serving.

Homemade Mango Ice Cream

You might be wondering if you can substitute all-purpose cream for the whipping cream. I wouldn’t recommend it because you would be sacrificing the ice cream-like consistency. Whipping cream has a higher fat percentage which makes it suitable for desserts such as this.

Now, I just need to stock up on ingredients and I know I can easily whip this up and have my mango ice cream fix whenever the craving hits!

Avocado remains one of my favorite fruits ever.

Some of my favorite foodie memories when I was growing up involved my mom preparing a simple dessert made of avocado, sugar, evaporated milk and ice cubes. This was done only within the rainy season because that’s the only time avocados are available.

Now, thanks to modern farming technology, fresh avocados are readily available practically throughout the year.

It also gave rise to the popularity of avocado-based desserts such as those found in Avocadoria.PH.

This dessert chain prides itself on its delicious dessert products made with fresh avocados and other premium ingredients. It also helps local avocado farmers by creating possibilities for use of their harvests and by recycling discarded avocado skins to be mixed with fertilizers used by the farmers.

Staying at home for the next month or so need not be the punishment we sometimes think it is.

We can stave off the dreaded cabin fever by injecting some sweetness in our lives, like the cute cheesecake-in-a-jar from SugarSalt Cakes & Pastries.

This operation started when thirty-year-old Carmela Aprecio decided to quit her job as a web developer and devote herself towards something she loves: baking cheesecakes!

What began as a hobby that provided sweets for herself, her husband and their friends became a new concept in dessert delivery.

Each SugarSalt cheesecake comes in a 120-gram jar, contains milk, cheese and sugar and costs Php75 per piece. Each cheesecake-in-a-jar should be kept refrigerated and will keep for six days from the time it was baked.

I was able to sample the best-selling Turtle Pie Cheesecake made with dark chocolate, caramel kisses, caramel fudge and pecan nuts over freshly baked cheesecake in a crushed graham cracker crust.

I loved SugarSalt’s cheesecake filling: it’s mildly sweet and richly cheesy, not too stiff and not too soggy. With every spoonful, the chocolate and caramel chips as well as the pecans add texture and flavor. The jar’s serving size is just right for one person… assuming that person is not a dessert addict like me.
